Speedy Salmon Casserole

This recipe is an old favorite that I am so happy to have found again. It is comfort food for those who enjoy the mild taste of white fish but prefer the health benefits of salmon. I love the creamy texture. My only change is an additional tablespoon of flour to create a thicker sauce. I also use the sharpest cheddar available. Thanks for publishing this.

Actually Delicious Turkey Burgers

I didn't have bread crumbs, but 1/4 cup of old fashioned oats processed to a fine crumb worked beautifully. I baked these in the oven at 325 degrees until a light golden brown. These are actually delicious indeed! You will have good luck with this recipe - especially if you remember to use the regular ground turkey, not turkey breast.

Tasty Buckwheat Pancakes

This recipe is for those who aren't necessarily die-hard buckwheat pancake lovers! The pancakes bake up light and fluffy and the taste is mild, but if buckwheat flavor is what you crave - look for a recipe that incorporates a greater amount of buckwheat flour. Real buckwehat pancakes normally do not rise as light and fluffy. but you'll get that great, old-fashioned buckwheat taste.

Sam's Famous Carrot Cake

Carrot cake tends to appeal to those of us who enjoy a healthier dessert. This recipe bakes up moist and tasty and is chock full of carrots and fruit! It isn't overly sweet, and is complemented well with a cream cheese frosting - but quite frankly could be enjoyed without.

Napa Cabbage Salad

This salad is absolutely delicious. I looked for a healthier ramen noodle that did not contain hydrogenated fat - but could not locate this at a standard grocery. Next time I'll visit Whole Foods.

Sweet Potato Potato Salad

Several reviewers have stated that the sweet potatoes give this dish a lot of color. A sweet potato has cream-colored flesh, not orange. They must have been using yams, which many mistake for the sweet potato. Yams have deep orange flesh and they are very, very sweet. I have found that few grocers know the difference - so check carefully before you buy your sweet potatoes!

Almost Eggless Egg Salad

You need to try this recipe! It is delicious. The flavors are spot on and - unless you are a fanatic about avoiding anything to do with tofu because you just have to have animal products - you will enjoy this immensely!
