Slow Cooker Carnitas

I thought this was EXCELLENT! I omitted the cinnamon, added chili powder and doubled the spices as mentioned by other reviewers. The combination of spices is really great and smelled delicious while it was cooking. I tried to start with a frozen butt roast and since it was taking too long to cook, I finished it up on the pressure cooker. I think I'll go straight for the pressure cooker next time (but start with a thawed butt roast. Everyone loved it and although I had a 4.5lb roast and thought I would be plenty (and maybe some leftovers,) it was all gone. I'm making it again for my dinner group next weekend. Can't wait!

Black Bean Soft Tacos

M-m-m-m-m!! I loved these!! I used 2 cans of Ro-tel and added a can of corn. I realized that I was out of cumin (the horror) and oregano. So I used a bit more chili powder and some fresh chopped basil from my garden. A dollop of sour cream put them over the top. I can't wait to eat them as left overs. Totally hit the spot with me and my husband. The kids will come around when I make them again.

Broiled Tilapia Parmesan

I really liked this recipe. I am not a fish/seafood lover but we are trying to do better. My six year old son absolutely loved it, he asked if he could have my husbands portion (he wasn't able to get home in time for dinner) or if we could have it again tomorrow. Next time I may omit the celery salt or try something that doesn't add any more salt to it. Other than that, very good recipe. I never follow a recipe twice, so nice time may be even better.
