Eggless Tofu Spinach Quiche

This was delicious! I made mine crustless though and used gruyere and swiss cheese instead. I thought the cooking time was slightly off but that may be since I used a 12oz tofu container. Took me about 50min at 350 degrees. I would definitely make this again. Easy to do variations too.

Mini Pumpkin Sage Balls with Balsamic Creme Fraiche

Very easy to do and tasted great. I actually bought a cooking pumpkin and cooked it in oven until soft and then smashed it up. Didn't have sour cream so didn't make the dip but thought they tasted great without it. I also added a dash of red crushed peppers for some spice.

Cajun Appetizer Meatballs

These meatballs were awesome. I doubled the recipe and used a hot bbq sauce instead of putting all the hot sauce in the meatballs. Everyone loved it for superbowl!

Fennel Soup

I made this minus the butter and then mashed up the fennel to make the soup. It was tasty but warning that fennel is somewhat of a laxative. Good for diet lovers!
