Spelt Biscuits

I crack the spelt in my blendtec and also blend some almonds and water for my own almond "milk" mixture in place of milk. I think they are delish! My family loves them. I also cut the salt in half, otherwise they are pretty salty.

Lebanese Lemon Lentil Soup

The soup is very healthy and filling. I guess the flavor wasn't as much to our liking as the Lentil Soup with Lemon by Jodi. That one is delish! This one is less expensive though and still okay. I guess after the other recipe, this one didn't quite hit it with the family.

Ranch Dressing II

I use this recipe for vegetable dip. We love it. To make it healthier I use 3/4 cup plain yogurt and 3/4 cup of sour cream instead of the mayo. Always turns out great. Best if it sits a night or two in the fridge.

Turkey and Quinoa Meatloaf

This is the best meatloaf I've ever had. Not to mention a great way to get quinoa in my family's diet. I left out the sugar because you really don't need it. Why ruin a perfectly healthy meatloaf with sugar? I "double" it by just making it with 2lbs of ground turkey and double everything else too. My kids and husband LOVE it and they are stingy with compliments. I also put them on one baking pan lined with wax paper and make them into 6-7 individual loafs. Makes it quicker to cook and less like one huge blob.

Lentil and Buckwheat Salad

I simplified this recipe by cooking the spices, lentils and carrots together with the veg broth. I didn't have the salt free seasoning so I added a few dashes of basil, sage, marjoram, onion power and garlic powder. I didn't want to deal with draining the lentils and with the carrots cooking with it I couldn't have drained them anyway. I cooked the egg covered buckwheat in water and added it after it was done cooking. It was a delish recipe! My family loved it, even my picky daughter!

Pecan Rice

Hands down this is the best rice recipes I've ever had. My husband was hoping for more but it was gone. I made it just how it says but with real butter not plastic-y margarine.

Quinoa with Peas

This is my favorite quinoa dish now! I made the changes suggested by another review and added 1/2 tsp of cumin, 1/2 tsp coriander, more thyme and it was excellent. This is definitely going in my recipe book!

Blueberry Sauce

OMG! This was the best topping for a yellow cake I made from scratch. Our company raved over it. I didn't have OJ so I used 1 squeezed orange with the pulp and 1/2 squeezed lemon. That equaled approx 1/2 cup so I added an extra 1/2 cup water. The sauce would be great over pancakes too. This recipe is definitely a keeper!

Braised Balsamic Chicken

This is the best chicken dish I've had! I left out the tomatoes. Put all other ingredients in my crock pot. Put a little olive oil in the bottom of the crock pot. I used 2 frozen chicken breasts and it only took 2.5 hours to cook. My husband raved about it! I did also subsitute the garlic salt for fresh garlic and did 1/4 cup of balsamic and 1/4 of white balsamic. I paired this with a mixture of brown & wild rice and steamed vegetables. We will be having again very soon! (Also, next time I'll make more of the sauce. It was very good on the rice and made it very flavorful!) Very easy and healthy meal!

Pesto Grilled Cheese Sandwich

I don't usually write reviews but this is the best grilled cheese sandwich I've ever had! I made my own pesto (which I make in bulk and freeze) I also didn't have provolone or american cheese so I used swiss and cheddar instead. It was so good! Went great with my homemade tomato bisque soup! Will definitely make again!

Black Bean and Couscous Salad

Our family loves this recipe. I make a little more sauce than it calls for and put fresh tomatos on top with a little grated parmesan cheese. It's wonderful! I make it over and over again. UPDATE: I also use quiona (it's gluten free) in place of the Couscous and tastes very similar but quiona is healthier than the pasta so we find it a great substitute!
