Beer Brisket, Beer Can Chicken, beer anything, Smoked Ribs, my Smoked Salmon was best complemented as "memorable", B&B Mushroom Rainbow Trout, Home-Made Sausage, (Greek Sausage was fantastic) Chili, Dips and Salsa's, getting more and more creative and adventurous in the Kitchen and back yard every day!

Bad memories of my father pounding the life out of a dead swiss steak! My mom made great chili
My cooking triumphs
Won the Dallas Drive Dip-Off amoung 22 other dips with my creation called Irish Guacamole, now rightly named "Gulf Coast Guacamole" because of the salsa and shrimp I add
My cooking tragedies
"Leather Brisket", take 11 pound brisket, put in smoker on a rainy, windy, yukky, stormy day, add 1 cup of frustration and several adult beverages

Burrito Pie
I observed many comments, so i decided to deep fry the flour tortillas in peanut oil. The middle one may be a little soggy, but not gooey. I used a Pie Tin and put a tortilla on the bottom, (this is better for serving), then add some mixture, cheese, then repeat again. I add another tortilla on the top, adding shredded cheese and chopped green onion to the top after 20 minutes. and let cook another 10. A lot of variations for this recipe, I love it. This batch mix was shredded Chicken, Pablano Pepper, Red Onion and crushed Black Olives and refried beans.

Barbie's Tuna Salad
This was really good! I used 10 ounces drained tuna and added a little extra of everything. No curry so I used Chili Garlic Sauce for the kick and an ounce or two of shredded mozzarella! WOW!! Will make again!!!

Simple Beef Stroganoff
OK, I added a small onion while cooking the ground beef, I doubled the Cream Of Mushroom Soup, added garlic powder to taste, cracked black pepper to taste, a can of mushroom stems and pieces, 7 oz of Sour Cream, 1 oz cream cheese, held the Worcestershire until all was cooking down, then tasted, added a few shakes of Worcestershire, (it can take over the taste and negate the sour cream) and simmered while 8 oz of fettuccine noodles boiled. The main thing about Stroganoff is your want that beefy flavor and sour cream to come out. More cracked pepper if you want a kick...and a little milk if your want to make it more gravy like. GOOD FLAVOR!
