I'm a Ph.D. in chemical engineering. About 5 years ago I realized that I have an inate cooking ability and find that I enjoy testing my limits on more and more difficult foods.

Fresh Spring Rolls With Thai Dipping Sauce
My family loves this recipe! I cook the shrimp in a Court Boullion which imparts great flavor to the shrimp. I also used the quick peanut sauce given by a previous reviewer. I took a spoon of the sauce in this recipe and included it within the spring roll to add flavor and moisture. Loved it.

Slow Cooked Corned Beef for Sandwiches
Really enjoyed this. I used 1/2 guiness and 1/2 harp for beer. I cooked the beef for 8 hrs on the low setting for the crock pot. It was absolutely tender and the sauce was fabulous!

Southern as You Can Get Collard Greens
I really enjoyed this. Not sure what to do about the Ham hocks, though. I found them indedible. Are they just for flavoring the greens or does one eat them? The only reason I'm going 4 stars instead of 5 is my family just didn't appreciate it as I did.
