Baingan Bharta (Eggplant Curry)

This is wonderful. I was looking for a main dish alternative to baba ganooj, and this is so much better. Very forgiving recipe: I forgot the garlic-ginger business and served yogurt on the side. I am going back for seconds now, and not waiting for my family to come home!

Homesteader Cornbread

Best cornbread I ever made. Love the soaking idea, it really makes a difference. Even though I need a new oven, the texture came out perfect. I highly recommend this recipe and method.

Vegetable Cornish Pasties

I used pastry for double-pie crust from this site. Left out mushrooms,turnip,cheese due to family preferences. Added some chopped zucchini.May consider peas next time Used a boullion cube in lieu of Marmite.Made 8 pastries-my picky eaters gobbled them up!

Lentil Loaf

This is this first time AllRecipes reviewers have let me down. At first the texture of mine was way too wet. After an hour and a half in the oven, it firmed up, but the lentils were very dry and the binding just didn't bind. The seasoning is way off. I never use soup mix under normal circumstances, but my son had bought some. I much prefer the vegetarian shepherd's pie recipe from this site. My family was expecting a redux of that, and were horribly disappointed.

Easy Sugar Cookies

Wow, you guys are right! i wouldn't exactly call making any cookies "easy", but these have a fabulous texture: I can't stop eating them! I added some cocoa powder and a splash of milk to the mix. I am afraid to make cookies because I have a wonky oven, but I followed the reviews, took them out soft, and they crisped up perfectly.

Dark Chocolate Cake II

I have been married for 20 years and this is the best cake I have ever made. My kids raved that it tastes just like Hostess. I had a carton of sour milk that i didn't want to throw away, so substituted 2 cups of that for the coffee, milk and vinegar. Frosted it with old-fashioned frosting recipe (flour-based) because I didn't have any powdered sugar. Seriously, the best cake I have ever had in my life.

Black 'N' White Bean Salad

My daughter is allergic to tomatoes, so I have been searching for an easy go-to salad, and this one's the winner! I used kidney beans and some lovely fresh arugula mixed with iceberg lettuce. Thanks for this.

One Bowl Brownies

Color me disappointed. It's not the first time I have made brownies from scratch. Followed directions exactly. Used the last of my holiday nuts. Used 125 gr. baking chocolate (4 ozx29=116gr). End result: light on chocolate, heavy on grease. Overbaked exactly one minute. Hard on the edges, which I expected, gooey and unbaked interior.

Eggplant and Zucchini Casserole

I can't thank you enough! I live in the Mediterranean and am always looking for new ways to use the same old things. I was able to use some sad old eggplant and zucchini that had been in my fridge WAY too long. This was cheap, vegetarian, and easy to make and serve. A lot less work than the stuffed vegetables I had been planning to make. My kids ate it without complaining (miracle of miracles!!) and my husband pronounced it good. I used mozzarella and served it with a side of leftover rice.

Sauteed Apples

Great way to doctor up some apples that were mealy and not so sweet. Like others said, the plan was to serve them with crepes, but we couldn't wait for the crepes. Yum!
