Vegan Black Bean Soup

I found this to be boring. It was at the tail end of a 21 day Daniel Fast though, so everything was boring :(

Spinach and Sun-Dried Tomato Pasta

Excellent with these changes. Tomatoes in oil, use the oil for more flavor. Add diced Kalamata Olives and white wine. Also some of the water from the pasta for the right sauce consistency. Next time I add some grilled chicken breast.

Lentil Soup with Lemon

OMG, this is fantastic! I was looking for a vegan recipe with lots of protein & tried this. We LOVED it! I didn't have tomato paste so I reduced the broth 1/2 cup & added a small can of tomato sauce. I also added 2 small diced potatoes to help thicken. Finished it off with a few pulses on the immersion blender. Serve with warm corn tortillas or crusty bread. The cilantro garnish MAKES IT.

Cedar Planked Salmon

Delish! Super easy, I reduced the soy to 1/8 cup. Marinated for about 45 min. The flavor was outstanding & the presentation excellent. And oh that smell coming from the grill! Had the neighbors jealous. Served with Asperagus & Herbed Baby Reds

The Best Bean and Ham Soup

This recipe will shatter your bland bean soup memories. FULL of flavor & not mushy. I didn't have much ham so I substituted some smoked pork loin and Itallian sausage diced up for the ham. I DID use a ham bone though. Thanks for the amazing recipe!

Country Apple Dumplings

Delish! I didn't have Granny smith & used Harelson instead. They didn't hold their shape, next time it's Granny Smith. Also, tried to save sugar by using only 1/2 can of soda... Mistake! The sauce is so rich & yummy, with 1/2 of the soda, I only got 1/2 of the sauce. There was barely enough to go over ice cream. I Did cut down the butter to 1/2 c plus 2 tbsp as others suggested. The presentation & flavor are company worthy! I WILL make this again & stick with the changes I noted.

Butternut Squash Soup II

I just made this last night with the addition of 1/8 tsp red pepper flakes, a splash of hot sauce a 1/2 tsp cumin & the juice from a wedge of lemon. THEN before serving, blend in 8-16 oz of sour cream to taste. Serve w/fresh parmesan cheese & a sprinkle of nutmeg. Without the changes it's a 3 star

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

Outstanding! I've been looking for a long time & this is it. Super quick & easy. Don't be afraid of the Jalepeno it's heat is offset perfectly by the sweet mango & pineapple. Double the sourcream sauce. Any mild fish would work, I used fresh cod fillets & fried them in tin foil on the grill. Also served on corn tortillas that I warmed on the grill.

Very good. The sauce is thick & clings well to the chicken. I dip the Chx in sauce & then bake. Made with 1/2 of the ketchup as others suggested.

Wow! Big family pleaser. So many possibilities for substitutions, too. I mixed refried beans in with meat & didn't have green onions, just minced sweet red onions instead. Used light sour cream & served with more sour cream & black olives.

Happy Shrimp

Yummy. Not spicy at all, though. I substituted FF cream for heavy & it wasn't as thick but the taste was great! I doubled the sauce & didn't have enough shrimp so I added some seafood medley with the shrimp. Delicious! Served over angel hair pasta

Delicious, fast & easy! I used Halibut (it's what I had on hand), reduced honey to 2tsp, changed mustard to spicy & used more nuts & less bread crumbs. The family loved it! I'll make it again.

Filet Mignon with Rich Balsamic Glaze

This was good but not great. Based on the other suggestions, I grilled the meat & made the glaze on the stovetop. I sauteed some minced garlic in olive oil THEN added the vinegar & wine. After reducing I drizzled it on top of meat. I'd like to see more depth to the flavor of the sauce. Next time I'd use some butter instead of Olive Oil.

Shrimp Etouffee II

Delicious! Like others, I added 2 bay leaves, 1 1/2 tsp Worchester & about 1 tsp of cajun seasoning. I also thinned the sauce a bit with about 1/2 c. chardonnay & chicken broth. I didn't have shrimp so I tossed in a seafood medley. The pan was licked clean :) I would say 6 servings is a stretch, though. It barely fed 4 in my home (2 teenage boys & an athleet husband) We WILL make it again.
