My favorite family cooking traditions
My husband and I tried to come up with our own family traditions, being that he is a Marine and we are not usually in the same place from year to year. We are both partally of Polish descent which led us to look into Polish Christams traditions. First, we discovered Wigilia. That explained why our Christams Eve was a much bigger celebration than was Christmas Day when I was growing up. So every Christmas Eve we now celebrate Wigilia and try to include as many Polish traditions as possible. We start with Borscht and break bread and kapusta but I have yet to try the herring!

I can not ever get a perfectly hard-boiled egg! Never ever!

Unsloppy Joes
Very tasty and filling. If you finely dice or even brunoise the veggies, the texture more closely resembles ground beef and binds better. My changes: 1/2 c chopped red bell pepper, 1 1/2 TEAspoonsof chili powder, 2 T tomato paste, 2 T vinegar, and added 1 T brown sugar and 1 T mustard. Yummmmm

Jamie's Cranberry Spinach Salad
The dressing makes this salad. Putting a bottled dressing on it or drastically changing the recipe would make a completely different salad. One would then be rating another recipe, right? Other than cutting calories by omitting butter or oil or reducing sugar, don't change a thing. The flavors in this salad are meant to be this way.

Roquefort Pear Salad
Everyone loved this salad. I thought the carmelized pecans were too sugary & hard, so I just use toasted or plain if I'm short on time. I agree that the amount of dressing should be doubled. I like to have it on hand. It's yummy!
