Two Ingredient Pumpkin Cake

As soon as I saw this recipe I wanted to make it. After going to two stores I couldn't find canned pumpkin. (Apparently there is a pumpkin shortage this year.) So, I used a can of sweet potato pie filling. The final result was a delicious, flavorful, and healthy tasting cake! So yummy and EASY!

Cinnamon Cookies II

A lovely cookie that tastes like autumn! It made the house smell incredible. I didn't want a flat cookie so I added a half cup more flour and a bag of Hershey's Cinnamon Chips.

Country Apple Dumplings

So EASY and so DELICIOUS! I used Cortland apples because I like them better and I also used five apples to make it more applely. I had my doubts that these would be good through the whole process especially when I poured a can of Mt. Dew on them but my GOODNESS they were WONDERFUL! Update: We used about seven apples and put the extra apples around the dumplings. The result: yummy baked apples in a delicious sauce with the best dumplings EVER. Wow! Whee!

Ham and Bean Soup

Yesterday I would have given this soup four stars. I made it in a rush and didn't let it cook long enough. Today I heated up the leftovers and had the MOST delicious soup EVER! It was thicker and much more flavorful than the day before. The only change I made in ingredients was to add corn. It was not spicy like the recipe might suggest but has a pleasant ham taste. This will be added to my recipe book!

Zucchini-Raspberry Bread

My final product was a dense bread with a lemony raspberry taste. I didn't have lemon zest so I squeezed in a teaspoon of lemon juice and and half teaspoon of lemon extract. (Thanks to reviewer, Ann) I used frozen raspberries but thawed them first. Since other reviewer said the raspberries were tart I tossed them in sugar first. This will be a keeper for us. Delicious!

Fresh Tomato Salsa

Sure wish I read the reviews before making this. I doubled the recipe except for the hot pepper and it still burned my head off!!!!! I ended up adding three times the ingredients to balance out the heat from five peppers. The final product was perfect with a good kick to it. One or two Serranos are plenty for this recipe.

Zucchini Alfredo

WOW WEE! This was AMAZING! Even the kids liked it. I added some shredded chicken, extra garlic and scallion onions while the zucchini was cooking down. My only regret was that I didn't double the sauce. Surprisingly delicious!

Italian Sausage Soup

So easy and so good! I made it as suggested but added some pasta to stretch it out! My children and husband don't like zucchini, tomatoes or spinach but they love this soup.

Roasted Cajun Potatoes

These went over well with my children and with me since they were easy to prepare. I tossed all the ingredients in a plastic bag and shook it up.(No dishes) Then I dumped it all into a well greased disposable tin pan (Again, no dishes to wash) and placed the whole pan on a preheated grill set on the highest heat. I stirred them about every five minutes making sure they weren't sticking to the bottom. When they started to get crispy I took them off the grill. They were perfectly seasoned as I added the ingredients the recipe suggested. They were not too hot and not too bland! Just Lovely!

Chocolate Mint Cookies I

About half way through baking I didn't like how flat they were so I decided to use a mini muffin pan. These cookies were moister and more chewy than the cookie tray ones. I ran out of Andes Candies about half way so I used chocolate chips, white chocolate chips and Dove Chocolate candies. All of them were lovely but not as wonderful as the Andes Candies. I wish I would have read the review about the chocolate covered cherries before I went shopping. Chocolate covered cherries would be amazing in these cookies. Next Time!

Annie's Fruit Salsa and Cinnamon Chips

I just want to add another five stars to this recipe, not that it needs it. The chips were surprisingly wonderful and the salsa was the perfect compliment. I will be making this often! Thank you Annie for sharing.

Cranberry Orange Cookies

I made seven types of cookies this Christmas and these were the most raved about! I followed the recipe as written except I used half butter and half Crisco instead of using all butter. (I do that with all cookies.) The food processor works great for chopping up the cranberries. Also, I chilled the dough before baking. It is a fun surprising little cookie worth the effort.
