Salmon with Dill

I haven't cooked fish very many times but a friend gave me some fresh dill and suggested salmon. This was so good, my husband asked if we could make it for his mother! I added juice of 1/2 lemon, microwaved it with diced sweet onion & fresh dill before pouring over fish and baking. Made tartar sauce with homemade Greek yogurt, mayo, relish & dill. Excellent meal served w/ rice.

Tofu Parmigiana

I followed the advice of others and baked the breaded tofu first. I added spinach between layers, next time I'll add more spinach for sure. A great recipe that I look forward to making again. Always looking for good tofu recipes and this is a keeper!

Rockin' Salsa

This was my first experience with the hot water bath process and I found these instructions to be easy to follow. The ingredients in this recipe are versatile enough to change up. I don't care for bell peppers so I used 6 banana peppers and one jalapeno. We like our salsa sweet, so I kept the sugar as stated in the recipe. There wasn't quite enough to get a full 8 pints, so we kept out the last bit (almost a pint). Wanted to try it right away anyway - it was gone in 15 minutes! We love it! Probably won't change anything the next time I make it, which will be soon.

Vegetarian Meatloaf

Just made this tonight and it's a winner! The best veggie meat loaf I've had. Great texture and holds together beautifully. Followed the recipe exactly, especially since it's been a while since I've cooked lentils. Excellent instructions too. The only variance, and it's minor, is I used regular oats but put them in the food processor to grind up so they're more like instant. Thank you for this great vegetarian recipe using things I always have on hand. It'll be one of my regulars!
