Asian Orange Chicken

I just made the sauce and served it on the side with my own tempura. Oh my gosh this sauce is amazing!!! I didn't bother to measure the orange and lemon juices, I just squeezed one lemon and one orange. My picky 11 year old even tried to talk her brother out of his share! I will make this sauce next time we have company.

Sweet Chipotle Grilling Sauce

So easy and very tasty. I marinated boneless skinless chicken breasts all day in this and then grilled them over indirect heat. We sliced the chicken and added to a main course dinner salad. After tasting, we all agreed that chicken breasts marinated this way would make the best grilled chicken sandwiches ever! Next time, I'm going to experiment with using honey instead or in addition to the maple syrup. I will make this again.

Ukrainian Red Borscht Soup

This was not good. I followed the recipe exactly and it didn't taste like anything at all. I wondered when it started with water if stock should be used instead. But, I assumed that all the veggies would flavor the soup. WRONG! I had to do some serious seasoning and added almost a cup of chicken broth powder before it tasted like anything other than water. What a waste.

Home-Style Vegetable Beef Soup

Excellent and easy. I shredded a zucchini which melted into the soup so my family wouldn't see it. I also chopped a large bunch of spinach and two handfuls of chopped parsley. Healthy and filling!

Swiss Chicken Casserole II

Excellent and easy. I always change a bit because I can't help myself. I used Campbell's Healthy Request cream of chicken soup to which I added pepper and poultry seasoning. I also sprinkled the chicken with salt, pepper and garlic powder. In an effort to lower fat and calories, I ommited the butter and just mixed 3\4 cup hot water with the stuffing mix before adding it to the dish. Even my family who doesn't want to watch fat and calories loved it!

Danish Potato Soup

In an effort to cut calories I ommited the dairy and flour, so I didn't make exactly the same soup. It was so good, but I spent a whole day making the ham broth because 1 hour is no way long enough.

Cheesy Chicken and Potato Casserole

It doesn't taste bad, which is why it didn't get only one star, but it doesn't taste like anything. Also, after 45 minutes the potatoes were still raw so I uncovered and baked for another hour and it was FINALLY done. I ended up having to feed my younger kids hot dogs because this took so much longer than stated. If you really added a bunch of other things it would probably be good, but I don't think this would be worth the extra trouble. I'm deleting this from my recipe box.

Chicken Tortilla Soup IV

I've always been afraid to try tortilla soups because I thought the tortillas would just be a soggy wet mess. I was wrong! This was delicious! I added a few tablespoons of lime juice, but fresh lemon juice would probably be excellent as well. I garnished with a teaspoon of sourcream on top of the crispy tortilla strips. So good and unbelievably easy.

Sloppy Joes II

I also put this in a crockpot after browning the ground beef. It was excellent! I put some veggies that I needed to use up into the food processor and added them to the mix in the crockpot and no one could tell, they just ate them up.
