Sweet Onion Pie

Very tasty! I used a 9" quiche pan but I think a 8" square glass pan would make it easier to remove the portions (thicker also). I used 2 sliced vidalia onions which made more than 2 cups. This can be made ahead (crust and onion part) and refrigerated, then add liquid part when needed.

Sesame Pasta Chicken Salad

Like others said, reduced oil to 1/3 cup. The sesame oil has a special flavor so don't leave it out. Couldn't find light soya sauce so used regular which made the salad a dark colour (only problem). A nice change from the usual pasta salad and was a big hit at our BBQ for Father's Day.

Go Anywhere Rhubarb Squares

I found this recipe in a Publix booklet. Ingredients the same, only difference is it was baked in a 9x9 pan for 40 to 45 minutes. Just the right thickness. The base looks dry when you put it in the pan but it works. Easy to make and tastes great!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Excellent! Reduced the cumin, chili powder and paprika to 1/2 teaspoon each. Used chicken broth (water + chicken bouillon cubes) and had to add two more cups at the end.

Creamy Sweet Potato With Ginger Soup

Very nice and creamy! I wanted to taste the sweet potatoes and not taste like pumpkin pie so I cut the ginger back to 1 tsp. and used just a pinch of nutmeg and cayenne. For the chicken broth I used 2 Knorr chicken cubes dissolved in the 3 cups of boiling water.
