Seven Layer Salad

Reviewed: Jun. 11, 2010
I'm giving this 5 stars b/c for the first time in 14 years, I was able to impress my MIL with something I prepared, she even took the recipe. Great salad, very easy to prepare and there was enough to serve a large group.

Fresh Strawberry Upside Down Cake

Reviewed: May 25, 2010
I only gave this 4 out of 5 because my husband really didn't like it, my son & I both loved it. I think I will change it up a little bit and not add so much gelatin to the berries. I used two 3 oz packs and the first pack seemed to be enough.

Stir-Fried Vegetables with Chicken or Pork

Reviewed: Feb. 25, 2010
Very good and easy to make. My DH didn't think he would like it when he looked at it in the skillet, but when he ate it, he said we could add this recipe to our cookbook, which means it was very good.

Teriyaki Pork Tenderloin

Reviewed: Feb. 9, 2009
I didn't have the olive oil that was called for, so I just used vegetable oil. And I used a pork filet instead of a pork tenderloin because that was what I had in the freezer. I think this marninade would be great on any meat especially if you were going to grill. I will be making this again as my husband and son liked it. I was okay with it because I don't like as much pepper as my husband does.

Cube Steak Parmesan

Reviewed: Sep. 23, 2008
Used spaghetti sauce that I already had on hand instead of making it by the recipe and I used a round steak instead of cube steak. I just cut it up in squares. The reason I gave it four stars instead of five was that the steak was not as tender as I hoped for. I will be making this recipe again.

Apple Squares

I omitted the nuts because we don't like nuts in baked goods. I have made two pans in two days, that is how good these bars are. I used it as a breakfast food.

We loved this recipe. There are never any leftovers. The steak is so tender you can cut it with a fork.

Egg Fried Rice

Reviewed: Feb. 19, 2007
We loved this. I made it for my extended family and my sister-in-law had to have the recipe. Instead of using green beans, I use a small can of peas & carrots, which is makes it more like the fried rice that we are used to eating.

Springfield Style Cashew Chicken I

Reviewed: Feb. 14, 2007
I don't normally eat cashew chicken, so I wasn't sure what it was supposed to taste like, but my husband assures me that it tastes just like what comes from a resturant. I've made it twice now and both times I've had no leftovers. I serve it with egg fried rice, the recipe is available on this site.

My stepson loved this dish and he doesn't eat very many vegetables. This is a keeper just the way it is.

Deep Dark Chocolate Cake

Reviewed: May 12, 2003
Oh my goodness! I will never have to buy a chocolate cake mix again. This is the best cake I've ever made or tasted. One thing I do is sift all of the dry ingredients. I've found this helps make the cake not as dense. I also don't use as much milk in the frosting as it calls for. Mine seemed a bit runny when I used the full amount.

A-Number-1 Banana Cake

Very moist and has a great banana flavor. It was just what I needed to get rid of some overripe bananas. I used the banana cream icing recipe that is posted here.

Pot Roast in Foil

Reviewed: May 12, 2003
What a great way to cook a roast! I had never baked a roast before and this was easy. I followed previous review and didn't make a foil packet, but put foil over the pan. Also, I added carrots, potatoes, and onions; these cooked up beautifully. The gravy that was made was wonderful and the meat was tender. I only had to cook mine for about 3 1/2 hours. My husband who doesn't like beef roast raved about it. This recipe is a keeper and we will be making this again.

Taco Pie

Reviewed: Jan. 21, 2003
This recipe was fabulous. It was both quick and easy to prepare and tasted great! As stated with previous reviews, I used a 9 x 13 baking dish instead of the square cake pan. I also used only 1/2 of the sour cream that the recipe called for and then let each person put extra sour cream on it if they desired.

Stuffed Pork Chops I

Reviewed: Apr. 29, 2002
Oh, my goodness did my husband love this recipe. He is usually very picky with how his pork chops are prepared, but he definately wants this recipe prepared again. It was so easy to prepare and smelled great while it was cooking. Anyone looking for a different way to prepare their chops needs to have this recipe.
