Bright Blue Monday Cake

Great recipe. Two cups of blueberries is a tad much though. I was a fan, but my dad said he wanted more "cake." I also used buttermilk instead of regular milk. Baked in a 8 by 8 pan, perfect size. Used butter and brown sugar for topping. Really tasty.

Jay's Signature Pizza Crust

Delicious alternative to store-bought doughs. I used bread flour because it was all I had and it came out nicely. I rolled one of the crusts too thin (and thus flimsy) to transport into the over so I just made a calzone, it was inhaled!

Get a Husband Brunswick Stew

Update: made this for camp again and this time added carrots and potatoes, loved the addition. Made this for camp and everybody (including myself) loved it. Five of us finished a huge crock pot's worth. I put 3 jumbo chicken breasts in with 1/2 a pork roast and 1/2 a beef roast. Removed and shredded the chicken first, threw some sauce on it and covered with foil. Then I did the same with the pork. Last came the beef. Right before before serving I added a bag of corn and 3/4 bag of baby lima beans. Also added chunks of red potatoes. Really satisfying, something a little out of the ordinary as well!

Spicy Bean Salsa

So good. I make this frequently. I normally use a squirt of Italian dressing, and also some olive oil with lime juice. Always use 2 or 3 cloves of fresh garlic, and lots of cumin and chili powder. Sometimes I use it as a base for Mexican chicken dip (refried beans or mexican rice, then mixture of chicken [cooked in taco/fajita seasoning and shredded] and salsa, and a can of nacho cheese...top with sour cream, salsa and green onions.)

Scrumptious Frosted Fudgy Brownies

This recipe absolutely lives up to its name. So decadent. I added some chocolate chips. I was afraid the brownie wouldn't be able to stand by itself (since everyone raved about the frosting) but they are terrific! This is the first brownie recipe I have tried (out of several) that has the potential to replace the double chocolate Ghiardelli box version which my dad loves.

Slow Cooker Buffalo Chicken Sandwiches

Definitely good and healthier than traditional wings. I only used about 1 T dry ranch seasoning. I added about 1-2 T each of honey, Worcestershire, and red wine vinegar. Finally I put a small can of low sodium chicken broth in with the hot sauce. Instead of shredding I cut the cooked chicken breasts into large chunks and then returned it to the crock pot with 2+ T butter and placed on the warm setting. Served on homemade buns (toasted with butter), with sliced sharp cheddar cheese, and slathered with a mixture of sour cream/spicy ranch dressing. Didn't find this too salty.

Cheesy Potato and Corn Chowder

Delicious! I used 1 cup of Vitamin D milk and 1 cup of heavy cream. Also used mushroom gravy mix. Even non-soup eaters loved this.

Chicken Souvlaki Gyro Style

Tasty. I marinated the chicken in lemon juice, greek dressing and greek seasoning. I always marinate all day/overnight, it was very flavorful.

Cake Balls

I personally don't care for these too much, they taste really artificial (and I don't mind boxed cake and canned icing). But I'm giving 4 stars since most people seem to like them. If you're looking for something similiar to these in shape, I'd suggest the Oreo Truffles (I also use Reeses Peanut Butter Cups)...both are good, but very rich.

Cinnamon Bread I

I love this bread, it is very dense. It's almost more like a pound cake. I bake in a bundt pan and always double the filling (putting 1/2 in the middle of the batter and 1/2 on top). I also normally do a simple glaze. After greasing the pan with butter I dust with cinnamon sugar which creates a tasty crunchy exterior.

Thai Chicken Balls

After scouring the reviews, I used ground pork and panko and added shredded carrot and bell pepper for color. In addition, I added some soy, teriyaki sauce, garlic, cumin and fresh ginger, red pepper flakes. I normally bake my meatballs but decided to pan fry these so they would achieve a more appetizing color. I drizzled with a homemade teriyaki sauce and toasted sesame seeds. I guess I altered the recipe a lot but I was pretty pleased with the result.

Reunion Meatballs

A local catering company makes delicious and different appetizer meatballs. I have tried several times to recreate them, this recipe come the closest to them. I use crushed ritz. Variations/additions to the sauce: cider vinegar, dry mustard, garlic powder, honey, and a ton of hot sauce! I like to bake them until they are deeply browned and then let them simmer in the sauce in a dutch oven or on low in the crockpot for hours so they are tender as can be.

Hoagie Dip

I looove Italian hoagies, so this is right up my alley. I go the Strip District (Pittsburgh thing) and get quality meats and cheeses: ham, spicy capicola, salami, pepperoni, and provolone. For the dressing: 1 cup mayonnaise, 1/4 cup sour cream, 1 T red wine vinegar, 2 T Italian Dressing, 2 t dried oregano. I like it cooked, but that's how I like my hoagies. In which case I serve the onions, hot pepper rings, lettuce and tomato on the side. I serve with lighly toasted french bread rounds. Also, my friends call this "deconstructed hoagie." I think it's an accurate description!

Baby BLT

As others have stated, these are a PITA, but well worth it. (I accidentally bought large grape tomatoes which added to the difficulty). People devoured these. I salt and peppered the cavities and turned them upside down for a couple of minutes while I was stuffing others. Once you get moving it goes pretty quickly. I ended up with leftover filling though. I made these to take to camp for 4th of July...very cute if you place underneath a patriotic napkin!

Very good. A little chewier than I would have liked but I guess that's just the nature of foccacia. I definitely threw a ton of seaonings on top of the bread. I made 1/2 the loaf into garlic bread...a nice twist on the same old!

The Best Rolled Sugar Cookies

I really wanted to love this recipe. Maybe I just hyped it up too much in my head. I was dissapointed for two reasons. I didn't care for the lemon flavoring, I used lemon zest. I guess I was looking for more of a bakery style cookie-I'll just do vanilla next time. My other problem was the fact that they spread so much you could barely tell what the cookies were supposed to be (I refrigerated the dough overnight too). But I found the dough easy to work with and the cookies to be soft.

Funnel Cakes IV

Fantastic! Served with whipped cream and sliced strawberries soaked in sugar. I used a funnel and it worked beautifully. Make sure you take these out when they are a lighter golden brown, that is if you don't care for them crispy. I used my small fry daddy (perfect size and shape for funnel cakes!)

Amish Breakfast Casserole

After reading the reviews I used a dozen eggs. I used pepperjack, colby jack, and sharp cheddar cheeses. I also opted for 1 lb of Jimmy Dean hot sausage and 1/2 lb of crumbled bacon. I browned the hashbrowns with some green pepper and loads of spices. I cooked in a 9x13 for about 50 minutes. This was very good and very filling!
