Ninety Minute Cinnamon Rolls

Hubby couldn't believe this was my first attempt at making homemade cinnamon rolls. Delicious! I followed another tip and baked for about 30 minutes in a 9x11 pan and served them with a cream cheese frosting. I also added pecans to the cinnamon mixture. Next time I will make a double batch and freeze some as suggested.

Dipping Sauce for Coconut Shrimp

I just made a variation - we don't keep horseradish, so I doctored my version with some ginger and added some very finely chopped fresh pineapple. Yum! I never would have thought of adding mustard to marmalade. I imagine this might work as a glaze, too, if thinned out with some Karo or Lyle's syrup?

Peanut Butter Chocolate Chip Banana Bread

Didn't have chocolate chips, otherwise followed the recipe exactly. Muffins take 15 minutes, mini loaves 20 minutes. Hubby wanted to eat the whole batch! Yum. This is a keeper.

Banana Cake VI

Loved it!! Hubby wanted to eat half of it. Modifications: Used Splenda instead of sugar, and vanilla honey Greek yogurt (and a half cup of skim milk) instead of buttermilk. Topped with fresh berries instead of frosting.

Butternut Squash With Cranberries and Almonds

Interesting combination. Not sure I'll make it again, but good enough for a second helping! We followed the directions exactly, except that I had to use yellow onion instead of red.

Sauteed Garlic Asparagus

Agree with previous reviewers - when you add the asparagus to the pan, turn it down to medium or med./low, cook for about 5 minutes. Done. Bam! Add a sprinkle of salt & pepper to bring out the flavor.

Hot or Cold Vegetable Frittata

Yum! Modifications based on what I had on hand: 9 eggs, spinach instead of zucchini, sweet yellow & red peppers instead of green pepper, leeks instead of onions, only 1 8 oz. package of cream cheese, swiss instead of cheddar. Added basil and tarragon. A great vegetarian dish, even for those non-vegetarians. The cubed bread helped bulk it up; my hubby didn't even realize it was in there!

Easy Baking Powder Drop Biscuits

I eliminated about 1/8 cup of milk, but they were still a bit too wet and didn't rise. Possibly because I used skim? Also added about 1/2 tsp. of garlic power and 1/2 tsp. of parsley. Taste was quite good, and these were easy & quick to whip up.

Marrakesh Vegetable Curry

Cooked this dish yesterday and made a few modifications just based on what we had on hand, but nothing significant. It was delicious! My brother-in-law has a very narrow food repertoire and is very suspicious of new flavors. He ate his whole serving and enjoyed it - just said "Don't tell me what's in it." I really like the flavors and will make it again.

Italian Sausage Tortellini Soup

Delicious. We reduced the green pepper and added mushrooms. Also kept the zucchini in larger pieces so it didn't "melt away" while simmering.

Mediterranean Orzo Spinach Salad

Very good! I made the following changes: used ground lean turkey instead of lamb; used sundried tomatoes instead of fresh; added sliced black olives; and added a bit of rosemary and paprika. I did not use the coriander or mint. I also blanched te spinach. The feta cheese was a great addition; with the warm orzo and meat it just blended in and gave it a very savory flavor. How wonderful to make an orzo dish without a stick of butter!

Jamie's Cranberry Spinach Salad

I agree with some of the other posters - use balsamic vinegar. I also used cherries instead of cranberries and it was delicious. A restaurant near me make this salad and adds blue cheese and uses walnuts instead of pine nuts - also very yummy and a bit sweeter.
