Marrakesh Vegetable Curry

Cooked this dish yesterday and made a few modifications just based on what we had on hand, but nothing significant. It was delicious! My brother-in-law has a very narrow food repertoire and is very suspicious of new flavors. He ate his whole serving and enjoyed it - just said "Don't tell me what's in it." I really like the flavors and will make it again.

Italian Sausage Tortellini Soup

Delicious. We reduced the green pepper and added mushrooms. Also kept the zucchini in larger pieces so it didn't "melt away" while simmering.

Really good! The family enjoyed it at Easter dinner. But it took me twice as long to cook as the recipe indicated (probably partially because I made a double batch).

Mediterranean Orzo Spinach Salad

Very good! I made the following changes: used ground lean turkey instead of lamb; used sundried tomatoes instead of fresh; added sliced black olives; and added a bit of rosemary and paprika. I did not use the coriander or mint. I also blanched te spinach. The feta cheese was a great addition; with the warm orzo and meat it just blended in and gave it a very savory flavor. How wonderful to make an orzo dish without a stick of butter!

Jamie's Cranberry Spinach Salad

I agree with some of the other posters - use balsamic vinegar. I also used cherries instead of cranberries and it was delicious. A restaurant near me make this salad and adds blue cheese and uses walnuts instead of pine nuts - also very yummy and a bit sweeter.
