Cherry Cobbler I

Dee-lish! I used half of the sugar as other reviewers suggested and fresh cherries. I think some reviewers are expecting the supermarket cherry pie taste (with artificial flavoring etc.). If you would like that taste- just get a few cans of cherry pie filling and use that instead of the fresh cherries:)

Gingery Mung Bean Sprouts Pancake

Thank you Kaoru! This recipe was delicious. I used all purpose flour almost double the mung bean sprouts and 1/2 cup of shredded carrots. It turned out perfect with some cayenne pepper sprinkled on top with tamari for dipping. Very low-calorie too!

Lebanese-Style Red Lentil Soup

I pureed the onions and garlic like another reviewer recommended. The texture is great- the spice combo is great (though I'll probably double it next time, as my honey & I love spicy!) This is going straight to the recipe box!

I made these without the shortening- didn't have any, so I used butter. I added Heath toffee chips like they do with the Seattles Best snickerdoodles. They turned out great. I will make these again!

Quinoa Tabbouleh

I followed other reviewers advice and replaced the water with broth. I left out the leek, added extra parsley and a tablespoon of vinegar. It was a real crowd-pleaser. It makes a ton- so have a big dish ready for it!

Honey Cashew Green Beans

I never could have imagined pairing green beans with honey- but it works! I love the sweetness. I used roasted & salted almonds cause I didn't have cashews. It turned out great. This recipe is a keeper!

Lentils and Rice with Fried Onions (Mujadarrah)

I got a box of green lentils, and didn't know what to do with it- so I tried this recipe. I followed it to the T, and it came out great! As with other reviewers, I recommend frying up at least 3 onions- they are sooo good!

Quinoa and Black Beans

I didn't have the veggie broth, so I just used water. I took the advice of other reviewers and used just 1 can of black beans, and I threw in a can of garlic, basil diced tomatoes. Yummy, yum, yum! I definitely will make this again.

Easy Mashed Potato and Roasted Vegetable Enchiladas

Very delish, healthy, vegetarian meal. I would definitely make your own enchilada sauce (I used the store brand- and it wasn't very good) Even with the enchilada sauce mishap- was very good- will be even better next time with the homemade stuff.

Mmm... delicious! This recipe makes a big batch- I paired it with 3 quarts of fresh strawberries (next time I'll triple the fruit- it went so fast! I topped it off with chopped almonds- made a pretty dish:)

Ratatouille

This dish is delish! With a few adjustments... I replaced the eggplant with butternut squash, threw in a cup of finely chopped fresh basil, added 3 extra cloves garlic plus a helping of garlic powder, 1/4 tsp. Italian seasoning, 1/4 tsp. cayenne pepper, 1/4 tsp. red pepper flakes, and 1 can of tomato paste. I threw mine in the slow cooker- on High for over two hours (until butternut squash was tender) Very Easy, great on its own or with pasta!
