Grandma's Lemon Meringue Pie

YAY! I did it! I am very proud of myself, because I normally don't like to bake. When my husband said he liked Lemon Meringue Pie, and that it reminded him of his childhood, I wanted to make it. I think it calls for the lemon zest, because it might add some extra lemony flavor. I used up all of my lemon juice, and the custard didn't taste lemony enough to be lemon meringue pie. So, I added some lemonade I had, and some lime juice to make it more tart. The recipe is great, it's the baker that had some issues.

Curried Mango Chicken

I love meals that don't taste like you made them at home! Very Delicious, a little sweet and a little spicy! My husband really enjoyed it too, but he said that the tomatoes in the dish made it seem almost italian. Next time I am going to make it with red bell peppers, instead of tomatoes. I served it over coconut jasmine rice.

Chop Suey

Hit the spot! I love me some Chicken chop suey. Next time I make this, I want to add two cans of bean sprouts. My hubby doesn't like celery, the texture mainly, so added celery salt instead to keep the flavor. I also used chicken broth instead of the 1 cup of hot water to bring out the flavor of the chicken I used in the dish. I'ma keepin this recipe!

Baked Egg Rolls

Super good! I created my own version with asian cabbage instead of bean sprouts. I made a wonton filling with ground turkey and put that in the egg rolls instead of chicken. I just love healthier versions of great food!

Italian Wedding Soup I

Yummy in my Tummy! I made this in a crock pot for a soup themed pot luck. My friend's 5yr old girl had 2 bowls. I was amazed! I make the meatballs with ground turkey sausage, because it gives the meatballs a different flavor & texture. Like other reviews I boiled the orzo seperately, and added a can of beef broth for a hearty flavor.

I was feeling adventurous when I decided to make this. The texture was great and the hint of nutmeg & cinnimon made the dish interesting in a good way. Took a little more effort than usual, but it was worth it.

Zucchini Oven Frittata

Easy to make, and a good way to use the zucchini I had. I didn't have a cast iron skillet, so I cooked the eggs then transfered them into a pie dish. Still good!

Eggplant Parmesan II

This recipe made the best eggplant I have made to dat, and I have fried it before. No more frying my eggplant anymore! The onlt thing I did different was sweat the eggplant for 30 mins.
