Panang Curry with Chicken

Reviewed: Dec. 29, 2011
I tried this recipe tonight for the first time. Our Asian market did not have the lime leaves so I used a squeeze of fresh lime instead and added some red pepper in when the chicken was half way done. I love the sweet crunch with the spicy sauce. I thought it was pretty good. Mine seemed to seperate and I had an oily orange coat on top which I ended up absorbing using a papertowel. Not sure why that happened. I also thought it was a little thin so think I will use another reviewers suggestion and do have coconut milk and half coconut cream next time. But overall, it was very good and fun to cook with new ingredients!

I was looking forward to this based on the reviews but personally, I found it way too sweet. And I like sweet! But the honey flavor was was too overpowering.

Caramels

Reviewed: Dec. 17, 2010
LOVE these! They are easy to make if you follow the recipe - you do need to stir for about 50 minutes (I was was somehow hoping it would be different for me but it wasn't!) I would recommend a good candy thermometer and I had to use my big pot to cook it in. I started in my large saucepan but it kind of "foamed" up when it started to get hot and it was dangerously close to going over. I peraonlly would recomment putting it in a 9x13" pan instead of a 10x15. I thought the caramels would be better a little thicker. I also added sea salt to the top after they had cooled for about 15 minutes....DELISH! Will definitely do that again! FABULOUS!

Chicken Enchilada Soup I

Reviewed: Nov. 25, 2009
Very, very good soup. I deleted the tortilla chips in it per suggestions. I wish it were a little thicker. I also fried some tortilla strips and sprinkled them on top when I served- loved the crunch! Next time I am going to try to thicken it up...any suggestions?

Mulligatawny Soup I

Reviewed: Oct. 29, 2009
I followed the recipe on this except celery (not a fan!) and I used one of the Costco rotiserrie chickens for the meat. This soup made my whole house smell so warm and cozy while it was cooking! I added the apples (chopped quite small) and was a little hesitant about it but you couldn't even tell they were in there - and I am super picky! My mother in law loved it and asked for the recipe and made it for her friends the next week. You know it is good if your mother in law asks for the recipe! I can't wait to make it again. This time I might add some coconut milk to it as well....

Grilled Ginger-Peanut Pork Tenderloin

Reviewed: Jan. 22, 2009
Wow- this was so easy and turned out so good! I marinated over night and my husband requested this be a regular meal. Even my SUPER picky kids liked it. I did not have fresh ginger so I used 1 tsp. ground ginger and it worked great. Next time I might double the marinade and keep half out to boil down for a rice sauce. This is definitely a keeper recipe!
