Shortbread Cookies II

I halved the recipe and I still got more than 2 dozen cookies. I don't have a cookie press so I just rolled up the dough into 2 logs, wrapped them up in plastic wrap and put them in the freezer for a bit before putting them in the fridge overnight. Then cut them in 1/2 inch slices and onto the cookie sheet with parchment paper. Turned out perfect in 12 minutes!!

Cajun Chicken Pasta

Turned out really well with a few adjustments: I seasoned the chicken with a good amount of cajun seasoning, a little cayenne, garlic powder and basil and let it hang out while I cut all the veggies. I sauteed the chicken but 2 chicken breast halves looked too much for the dish so I took some out (I made 3/4 of a 16oz bag of brown rice penne). I then added some garlic and the veggies: 1 medium red onion, mushrooms (next time I'll cut them thicker), and one red bell pepper (next time I'll throw that in a little bit before the rest of the veggies). I sprinkled in about 3 tablespoons of flour and cooked it a bit. Then deglazed with some white wine and then the cream and some milk. Next time I'll use like only a 1/2 cup of cream because the sauce thickened up nicely because of the roux so I would use evaporated milk or half & half and milk. I kept seasoning with cajun seasoning, basil, salt and pepper. I didnt have lemon pepper so I just added lemon juice from half a lemon. At the very end I added about 3/4 bag of baby spinach and some pasta water to thin out the sauce and finally some parmesan cheese.

Lasagna Alfredo

I didnt follow the recipe exactly so it didnt turn out just perfect. I read some of the reviews and decided to add some more chicken, but it turned out to be wayy too much chicken. I thought there wasn't enough sauce. The lasagna turned out to be a bit dry. I also used the oven-ready lasagna noodles, so maybe there needs to be more sauce for those. Next time I'll use more sauce or just thin out the sauce so the noodles have extra liquid to soak up. I also seasoned the ricotta/spinach mixture which was turned out good. The cooking time was also too much for my oven. Next time, I would cut down on the cooking down or cover the lasagna for the beginning of the cooking process. I also mixed all the sauce and the chicken together, but next time I would like to have some sauce without the chicken for the bottom and top layers of sauce. Also, mushrooms would be a good addition to this.

Oven Fresh Seasoned Potato Wedges

AMAZINGGG....I also added some italian seasoning and cayenne pepper. The first time I made it, it took so long for the potatoes to cook through that the fires browned too much. So, the second time, I parboiled them in the microwave for a few minutes. That way, they cooked in the over and were the perfect golden brown.

Queso Dip

Good basic recipe! I made the following changes: I added a little milk to the butter and cornstarch roux; then some sour cream, and refried black beans and salsa. I added some canned green chiles to that and only maybe 1/2 cup cheese or even less than that. And finally I garnished with a little green onion.

Whole Wheat Banana Nut Bread

Delicious and hearty! I used 1/4 cup honey and 1/4 cup brown sugar. I used 3 ripe bananas and added 1/2 teaspoon cinnamon. I added 1/4 cup walnuts and 1/4 raisins, but next time I'll be adding more walnuts, raisins, and cinnamon.

Best Spanish Rice

So delicious! My husband absolutely loved them and he's not big on rice. I only had a cup of brown rice left so that's what I used. But I still kept the 1 cup of salsa. I used a canned salsa ranchera which was pretty delicious. I also added some garlic to the rice while I was sautéing it. I still used 2 cups of broth (1can) because brown rice needs more liquid anyways. Turned out very good.

Grilled Asparagus

This is a fool-proof basic recipe...I did add a sprinkle of garlic powder, dried herbs, and some chopped garlic. I was cooking some chicken at 375 degrees so I stuck these in at the same temperature and they were done in about 15 mins. Perfect!

No Bake Cheesecake I

This worked out perfectly! Since I did not have a day in advance notice to make cheesecake, I decided to finally give this a try. It doesn't taste like the real deal but its veryy good! The texture is different and its less dense. I feel like its better in the summer. I did double the amount of cream cheese and whipped cream. I tasted it and decided to add a bit more sugar as well, along with some vanilla extract. It set perfectly in the freezer. I made a simple strawberry topping to go on the top.

Actually Delicious Turkey Burgers

I just made these..and they are amaazing! I added 10+ dashes of Worcestershire sauce, a good squirt of Siracha, 3 cloves of grated garlic, and I left one egg yolk and one eggwhite. I substituted cilantro for parsley because I just like the flavor better. These are delicious!

Tiramisu II

OMG delicious!! For those people who had a hard time splitting the ladyfingers in half lengthwise, it was probably because you've purchased the 'hard' ladyfingers, as I did. I didn't know there were two kinds. So, I didn't cut them, and just used the whole thing like that, and it turned out perfect. Also, I didn't drizzle the coffee/rum mixture on them but dipped them really quick in it. For the NEXT time I make it, I might combine the custard/mascarpone mixture with the heavy cream to make one lighter custard filling. I felt like the mascarpone layer could have been lighter.

Quiche

a great basic recipe to work off of! I baked the crust for about 10 minutes while the oven was preheating, just to prevent it from getting soggy. I used a cup of a blend of shredded cheese mixed with about 2 tablespoons of flour. I spread that on the crust and then some spinach, mushrooms and onions I had sauteed together. Then I added the mixture of eggs, which I added an extra egg white in and some paprika (eliminated the mustard powder since I didn't have any). I also put foil just around the rim of the crust because it would have definitely turned too brown. Since I cut down the cheese in the quiche, I added a little sprinkle of it right at the end to finish the look. Tasted great!! Next time, I think I'll cut down on the cheese even more because the crust didn't get soggy especially because of baking it a little at first

Baked Buffalo Wings

very crispy and delicious. I started by drying the wings really really well, even squeezing them a little. I then threw the wings and flour mix in a big ziploc bag and shook it. I left the wings in there for about 40 minutes, then on a tray lined with foil and sprayed with non-stick cooking spray. Baked them at 400 for 25 mins on each side. Whenever I checked on them, I wiped off juices in the pan with a paper towel on tongs just so they don't get soggy. I then dunked them in buffalo wing sauce and threw them back in the oven for 5 mins on each side. They were a little overdone, so next time I'll only put them in 20 mins on each side.

Chicken Tortilla Soup V

Very good basic recipe. I used a quarter of a leftover rotisserie chicken, so I put in the leftover bones and chicken with the skin on in there and let it simmer for an hour. I also added a dollop or two of sour cream when the soup cooled down a little.

Creamy Caramel Flan

Very good basic flan recipe. I substituted low fat evaporated milk and low fat sweetened condensed milk for the full fat versions and the flan still tasted very full bodied and rich. We couldn't tell the difference. Very tasty

Mexican Bean Salad

Amaaazing recipe! the dressing was phenomenal but i have to say that it was too much. I had a total of seven cans of different kind of beans and this dressing was the perfect amount for it. But next time I'm making less, I will be definitely cutting down on the measurements. Really great recipe. The flavor is amaazing!

Banana Muffins II

AMAAAZING!!! i did add about 1/2 teaspoon of cinnamon, 1/4 teaspoon nutmeg and 1/2 teaspoon of vanilla, as well as half a cup of walnuts to one batch and chocolate chips to the other half. I had to double the recipe b/c these were deeelicious! My family looved them!

Taqueria Style Tacos - Carne Asada

The marinade was absolutely perfect. The flavors were on spot. I actually cut the steak pieces into strips before marinading just to make it a little hassle free the next day. I marinaded the meat over night and it turned out very flavorful. I actually used this for fajitas and not tacos, which turned out wonderfully. I also made the salsa/sauce to go along with it. I toasted and dipped four new mexico chile pods in water but ended up using only 2 since the jalapenos had enough heat. Even with only 2 chile pods in the salsa, it turned out pretty spicy, but excellent flavors due to the roasting of the vegetable.

White Chocolate Raspberry Cheesecake

Absolutely AMAAAZING!!! This recipe was so easy and turned out just delicious. It looked fabulous with the marbled red and white top. However, I did use seedless raspberry jam instead of making my own syrup. But that was a bit too heavy maybe, because it made indentations where i had placed it on the top even after baking. But it still looked marvelous. I did use more white chocolate chips to enhance the white chocolate flavor even more. And as other reviewers advised, I melted the chocolate with the half n half in microwave, which was easy and hassle-free.
