Roasted Garlic Zucchini and Tomatoes

I found this recipe today in the daily favorite photos--just in time to make something different! I used summer squash instead of zuchinni because that is all I had on hand. I used extra garlic, but will probably even use more next time. I cooked the squash for about 15 minutes before adding tomatoes, garlic and onions just so they wouldn't burn. I can't wait to try this with zuchinni...thanks!

Chocolate Eclair

All I have to say is DELICIOUS!!!! Yummy and so very easy. I used the french vanilla pudding as suggested, but used milk chocolate frosting. I use this recipe often, and it is always a huge hit!!!

Brooke's Best Bombshell Brownies

I thought these brownies were excellent. They are chewy and just plain delicious. If you like cake like brownies, these are not for you. I cut back the sugar to 2.5 cups--my friend who is a brownie expert said these are the best she has ever had! Hubby loved them too, with ice cream of course!!!

this is my first time making gravy---scaled the recipe down to 6 people and followed exactly except I left the liver out--and all I can say is YUM. I will make this gravy going forward! thanks!

My Navy Bean Soup

Per other reviews, I soaked my beans overnight and used ham in place of the bacon. I also used some spices and only 1/4 cup of butter. I thought the soup was pretty good with these changes.

Roasted Winter Squash Seeds

Made some of my favorite squash today, butternut, and decided to look on line to see if the seeds could be cooked like the pumpkin seeds. I found this recipe and followed it but had to cut back on the oil/salt because my squash didn't give me quite a cup! My DH loved it!!!! Quick easy and delicious. You can use any time of flavoring you like--cinammon & sugar, garlic powder, cayenne pepper, chili powder, etc....possibilities are endless. Thanks Blancheskid.....

CKL -Oatmeal Pancakes II

I really enjoyed these pancakes.. I used half white and wheat flour, I also used brown sugar instead of white and used applesauce in place of the oil. From previous reviewers, I left half of the oatmeal to add in after processing everything together to give my pancakes some texture-I really loved it with the pieces of oatmeal. I topped it off with the "simple maple syrup" from this site--it was awesome--I will make again and often.

Peanut Butter Vegetable Chicken Soup

Zucchini Brownies

All I can say is I can't wait till my zucchini's are ready in the garden!!!! My husband and I really enjoyed this recipe--and surprised a lot of people who couldn't believe there was zucchini in these tasty little treats! I did not even use the frosting....they were eaten before I had to time to frost them! ha! Thanks Marian!

Ultimate Twice Baked Potatoes

I have made these several times now--once with low fat sour cream and once with low fat cream cheese--both times were awesome!! Per other reviews, I too crumbled the bacon and add it in the mixture instead of just on the top. I usually make a dozen or more of these at a time and freeze the leftovers. My husband loves these, so it's nice to have them on hand in the freezer as I just pop them in my toaster oven--so yummy!!! Thank you ponygirl for a great recipe!
