Mini Baked Quinoa Patties

These are great! I'm a big quinoa eater, this is a nice variation. I followed the quinoa package direction when cooking (2 c water, 1 c quinoa)and added flavoring. Then mixed in fresh chopped spinach, only 3 eggs, and slightly more cheese with the called for ingredients. Plus, added some garlic salt, pepper, and rosemary. A winner for me, my husband, and 1 year old. Quick, easy, and healthy. Have plenty for the week.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

I make this often. Easy and delicious dish. I always make a recipe my own by adding my own ingredients. I've add different spices, veggies, and cheeses to the mix. Usually comes out great. Serve with rice and you have your meal.

Guinness® Corned Beef

Best corned beef ever! I've made this several times now in my slow cooker; it's always a huge hit! Adding carrots, onions, potatoes, and cabbage is the way to go.

Spinach Brownies

I was expecting a quiche type dish, but surprisingly it wasn't. I substituted almond milk for milk, and vegan mozzarella for cheese. Great breakfast casserole or even as a side at dinner. Next time I will use less butter and more spinach.

Hungarian Mushroom Soup

Good. Not overwhelming. Light soup that can probably be thickened up with a little cornstarch. I would go as far as to add potatoes to give it a little weight. Flavors are nice.

Crustless Cranberry Pie

Drooool. Excellently tart pie. Unbelivably easy to make. Mix all ingridients together, through in a pie pan, and presto...40 min later a scrumptious pie/cake like concoction. DO sprinkle brown sugar and extra walnuts on top. AND DO serve with fat free cool whip (to cut down on calories). This pie is good warm or cold. Let the raves continue.

Mom's Ginger Snaps

Flavor is not overly sweet. I like that this turned out as a "thicker" cookie than most. Cooked at 8 min on 350. Came out crisp on the outside and soft on the inside.

Butternut Squash Fries

Again, came out too soggy. But I may have made the slices too thin. Will try again at a different size and bake time. Flavor was delicious though. Shook squash and oil in a ziploc bag. Spread out in a pan and salted with garlic salt. Yum.

Butternut Squash Soup

Tons of different variations to this soup. This recipe works well w/o cream cheese and marjoram. I also followed other reviews and baked the butternut (brushed with olive oil/garlic) for an hour at 350. Serve with some homemade toasted bread. Great warm meal for a cold fall night!

Cranberry Orange Cookies

Great flavor. Easy to make. Instead of fresh cranberries, I chopped a cup and a half of craisins and through them in. The glaze adds a nice sweetness to the cookie. I might cook for only 10 min next time, as I like my cookie more on the chewy side.

Oven-Roasted Asparagus

Yum! Although if you have really thin spears, cook them less than 15 min. and use less oil. The flavoring was delicious! So easy and nutrious for you! Goes great with the Marinatted Mushrooms II recipe, a little rice, and salmon.

The Best Vegetarian Chili in the World

Who needs meat when you've got an awesome veggie chili like this! No need for using the veggie burger crumbles, it's great w/o it. I also added a hot hot pepper (seeds and all). Came out super hot. To combat the heat, I added about 3/4 cup brown sugar. It's still hot, but the sweetness makes it bearable. I ate a whole bowl yesterday! For me, that heat is a lot! Next time I'll ease up on the hot peppers and maybe a little less pepper.

Herbed Potato Soup

Taste is phenomenal. Followed the recipe, except added 1 more potato and about 3/4 cup of leftover heavy cream. I also used original almond milk instead of milk. Tasted exactly like the real deal. The bowl could feed around 5 or 6 people. Some of the best and easiest soup I've even made. And I make a lot of soup.

Peach Muffins

Never made peach muffins before. But now, these will be a staple in my home! I followed the easy recipe to a "T" and used the most ripe/sweeteset peaches. Baked for 15 min and cooled. To add extra decadence, I drissly honey over the top before I devour it. Although, the muffin is excellent all by itself.

Scalloped Tomatoes

I finally found out the secret to perfect pizza sauce, this is it! Actually, its perfect just as it is! I think I added a tsp more of brown sugar. Used olive oil instead of butter. Can't wait to make this again. Probaly costs under $5 to make a batch. Great side dish or if you love tomatoes like me, this is dinner!

Cream of Fresh Asparagus Soup II

Excellent! I cut the recipe in half, and ate the soup for twice for dinner (for 2) and once for lunch. I also added a skinned/chopped potato to the recipe, let it simmer for about 15/20 min in the broth. I think it really made it. Forgot to add the lemon juice. Nevertheless, it turned out great!
