Once whipped up an angel food cake from scratch. First time ever. Sadly, I did not have the correct pan to bake it in. It turned out deflated and dense. :(

Espinacas con Garbanzos (Spinach with Garbanzo Beans)
I make this often. Easy and delicious dish. I always make a recipe my own by adding my own ingredients. I've add different spices, veggies, and cheeses to the mix. Usually comes out great. Serve with rice and you have your meal.

Guinness(R) Corned Beef
Best corned beef ever! I've made this several times now in my slow cooker; it's always a huge hit! Adding carrots, onions, potatoes, and cabbage is the way to go.

Spinach Brownies
I was expecting a quiche type dish, but surprisingly it wasn't. I substituted almond milk for milk, and vegan mozzarella for cheese. Great breakfast casserole or even as a side at dinner. Next time I will use less butter and more spinach.
