Barbequed Steelhead Trout

Soooo good! And so simple! I didn't feel like grilling, so I just cooked my fillets in a pan, skin side down. Make sure not to heat up the pan. Just place in the pan, turn on the stove, medium heat. Let the skin get crisp, then cover with the pan's lid and let it cook to desired doness. I boiled the left over marinade, let it cool and spooned it over the fillets. BTW, I used Sweet Baby Ray's BBQ Sauce.

Kettle Corn

Great fool-proof recipe! I never liked microwave popcorn and my old hand me down microwave never cooked them correctly, so this is an awesome alternative. I just made caramel popcorn by popping a batch of this without the sugar and then using "My Amish Friend's Caramel Corn," also found on this site. Just cut the caramel corn recipe in half. It's perfect!

White Chocolate, Chocolate Cookies

I have done this recipe twice and it's always been a hit! My neices and nephews love to help me cook/bake and they love helping me with these. Next time, I'll try to use my stand mixer, because the dough does get a little thick to mix by hand.

Kalua Pig in a Slow Cooker

Easy and tastes authentic. I brought this for a Hawaiian themed potluck where another person brought their version as well. Two people that have actually lived in Hawaii said mine tasted just like home to them. This recipe is definitely a keeper! If you have left-overs, you can easily turn this into some pulled pork sandwiches, just top with your favorite BBQ sauce.

French Silk Chocolate Pie I

Super recipe! My family just loves French Silk Pie from that one chain bake shop. And this is identical to it as long as you double your recipe for each pie, but only use 1 cup sugar total. I recently made this for Christmas for both my family and my in-laws. They were impressed! I used a Kitchenaid mixer that I had gotten as a wedding gift. Thank God for those!!! Remember to beat for 5 minutes each time you add an egg. Top with cool whip, and it's perfect!

Chicken Makhani (Indian Butter Chicken)

Great recipe! I did substitute heavy cream for half and half. Also, I didn't use cornstarch, and instead, used 1/2 cup finely ground cashews. It makes all the difference! I used chicken breast and marinated it in Tandoori Masala before browning them. My husband introduced me to Indian food when we were dating, and butter chicken is his favorite dish. So I'm glad I found this recipe. He loved it, and so did I!
