Red Chard and Caramelized Onions

Reviewed: Oct. 3, 2013
I'm not a fan of swiss chard, but this recipe at least made it eatable.

Apple Crisp II

Reviewed: Mar. 30, 2013
I LOVED this recipe, but I certainly added my own flair. Everyone came back for seconds and thirds and begged me for the recipe. It's an awesome crisp! Here is what I did differently. I used a mix of Granny Smiths and Red Delicious. Added 1/2 cup sugar instead of 1 full because of the apple mixture. Added in caramel sprinkles from Pampered Chef. Perfection! I added about 2 tablespoons of cinnamon. Added nutmeg and salt (a dash). Doubled the topping and used old fashion oats and just a little more than 2 sticks of butter. With doubling the topping it requires 2. These changes ended up making it the perfect combination of tart, sweet, salty, buttery, and crunchy. It's amazing. I'm eager to make it again. Flipping fantastic!

Pumpkin Bread IV

Reviewed: Oct. 24, 2009
I think I overdid the clove and nutmeg just a tad, but it's still amazing. I did add 4 cups of pumpkin because I'm just a huge fan of pumpkin and I thought the worst it could do to this bread was make it more moist. I was right! The bread turned out super moist with just a little bit of buttery crunch on top (I put butter on the outside as soon as I got it out of the oven). I can't wait to share this with my family!

Sock it to Me Cake V

Reviewed: Sep. 30, 2009
This cake was incredibly moist and delicious. In the past I've used other recipes and always felt the cake was too dry. I did make variations to the recipe. 1. I only added 2 TBSP of cinnamon, I added another 1/2tsp of mexican real vanilla (delish!), I also added a little butter in the cinnamon, sugar, nut layer. It helped bind and saturate the layer. The biggest thing is that I only baked the cake for 65 minutes in the oven. 90 would have RUINED it. So, I guess I should say that with the tips people gave and some of my own, it became the best Sock It To Me can I've ever EVER had. I would highly suggest the way I baked it.

They taste great, especially using real mexican vanilla! They were a tad cake-like, but still great.
