Chicken and Gnocchi Soup

I've made this twice in the past couple of weeks - once with gnocchi from the pasta aisle and once with the refrigerated stuff. We definitely preferred the refrigerated gnocchi! This soup has great flavor and consistency. My son declared that this is the best chicken soup he's ever had! It's a keeper!

Homemade Melt-In-Your-Mouth Dark Chocolate (Paleo)

This was surprisingly good! I used a whisk to mix the cocoa, honey and vanilla into the melted coconut oil, then poured it into a foil-lined loaf pan (this size pan created the perfect thickness) and sprinkled in some toasted pecans. Chilled for about 1 1/2 hours, popped the foil out and cut the chocolate into pieces. Very creamy and definitely melt-in-your-mouth! Will make this again and again! Great recipe for a healthy treat!

Emily's Famous Marshmallows

Just made these and I have to say that at the beginning of the process I thought I was going to have to chalk this one up as one of those recipes that sounds good but doesn't live up to the hype...., I'm happy to say, that these turned out really well. Like other reviewers have said, once you have these, you won't want to go back to the store bought marshmallows! A couple of things I noted for the next time I make them: 4T of unflavored gelatin = 5 envelopes of Knox; get your water simmering, so once you add the Knox to your 1/2 c water, you can set that on top right away - otherwise it gets a little clumpy - which, by the way, does dissolve once it warms up; the vanilla you use makes a big difference in taste, and finally, work fast when getting the final product into your pan - waiting even a minute or two makes it a bit harder to spread. Fun recipe that tastes great! Will be giving these with gourmet hot chocolate and vintage looking mugs for Christmas gifts. Thanks for sharing!!

Orange Cream Fruit Salad

The orange juice concentrate gives this salad such a refreshing flavor. I've found that I get the best results by really draining the canned fruits well - even blotting with a paper towel - prevents it from getting soupy.

Fresh Lime Curd

Served this on fresh homemade English muffin toast. Amazing!! I couldn't believe how easy this was. I'll never buy lime curd again. FYI - the natural color of this curd is not green - more a shade of yellow. Used 1 drop of green food coloring to lean it toward green which was more of an experiment than anything else and really not necessary.

Garlic Prime Rib

I'm not a big fan of prime rib, but my husband wanted to try this for Christmas. We marinaded a 7 lb roast for about 24 hours, following the recipe exactly, but baking 1 hour longer than the instructions called for. I have to say, this was excellent! I think it would also be fantastic on rib eye steaks! This recipe definitely took the fear out of preparing prime rib! Thank you for sharing this awesome recipe!

Easy OREO Truffles

With all the great reviews of this recipe, I think I was expecting it to be better than it was. Not sure I like the Oreo taste of the truffles - thought by mixing with cream cheese they would be creamier. They were okay but just didn't hit the mark of being "amazing". Will continue to look for a more traditional truffle recipe.

Marinated Pork Chops

One word - AMAZING!!! My husband made these tonight and followed the recipe exactly with one exception - only had one hour to marinate them. These were seriously the best pork chops we've ever made! Excellent recipe!

Portobello Mushroom Burgers

I think I liked the idea of these "burgers" more than the actual burgers. They may have been better with some sauteed onions and crispy turkey bacon. Probably won't make these again. Sorry!

Delicious Ham and Potato Soup

This is now my "go to" recipe for potato soup. I like to use red potatoes because I don't have to peel them. I omitted the ham but topped each bowl with crispy bacon. One word - YUM!!!

No Bake Peanut Butter Pie

This is an delicious, easy recipe! I cut the fat a little by using low-fat cream cheese. I also use a chocolate crumb crust rather than regular graham cracker crust and top with chocolate shavings. YUM!

Chinese Chicken Fried Rice II

This is very good - not exactly like what we get at our favorite Chinese restaurant, but still very good. I've made it twice now - once with chicken and once with diced ham-both times adding oyster sauce, shredded carrots, frozen peas and scallions. Both versions were a hit!

Stuffed Cabbage Rolls

I had never tried stuffed cabbage rolls before, but thought I would give them a try for St. Patrick's Day. WOW! YUMMY! The only change I made was to add a can of diced tomatoes over the top of the tomato soup to add a bit more liquid for the cabbage rolls to cook in. The kids thought they were just okay, but my husband and I thoroughly enjoyed them. Will definitely make them again. Thanks for a wonderful recipe!!
