Megan's Granola

Reviewed: Dec. 22, 2010
I substituted 3 cups of coconut for the wheat germ and oat bran and omitted the sunflowers seeds. Other than that, I followed the recipe exactly with excellent results! We'll never eat store bought granola again!!

Garlic Prime Rib

Reviewed: Jan. 5, 2011
I'm not a big fan of prime rib, but my husband wanted to try this for Christmas. We marinaded a 7 lb roast for about 24 hours, following the recipe exactly, but baking 1 hour longer than the instructions called for. I have to say, this was excellent! I think it would also be fantastic on rib eye steaks! This recipe definitely took the fear out of preparing prime rib! Thank you for sharing this awesome recipe!

Ultimate Twice Baked Potatoes

Reviewed: Jan. 5, 2011
Made these to accompany Garlic Prime Rib, also from this site. They were very good and actually easier to make than what I expected. Will definitely make again!

Delicious Ham and Potato Soup

Reviewed: Jan. 5, 2011
This is now my "go to" recipe for potato soup. I like to use red potatoes because I don't have to peel them. I omitted the ham but topped each bowl with crispy bacon. One word - YUM!!!

I needed a broccoli side-dish for an Asian themed dinner. This was perfect. I even received requests for the recipe. Thanks for sharing!

The Best Rolled Sugar Cookies

Reviewed: Feb. 17, 2011
These turned out really well. Finally, a cut-out cookie that holds its shape!! The only change I would make is to use powdered sugar on the rolling pin rather than flour - this might add a tad more sweetness to the final product. Excellent recipe!

Stuffed Cabbage Rolls

Reviewed: Mar. 18, 2011
I had never tried stuffed cabbage rolls before, but thought I would give them a try for St. Patrick's Day. WOW! YUMMY! The only change I made was to add a can of diced tomatoes over the top of the tomato soup to add a bit more liquid for the cabbage rolls to cook in. The kids thought they were just okay, but my husband and I thoroughly enjoyed them. Will definitely make them again. Thanks for a wonderful recipe!!

Saltine Toffee Cookies

Reviewed: Mar. 19, 2011
These are amazing! I made these before using saltines, but this time used Townhouse crackers and found that my family actually prefers the Townhouse crackers. Totally addictive!

Chinese Chicken Fried Rice II

Reviewed: Apr. 2, 2011
This is very good - not exactly like what we get at our favorite Chinese restaurant, but still very good. I've made it twice now - once with chicken and once with diced ham-both times adding oyster sauce, shredded carrots, frozen peas and scallions. Both versions were a hit!

Fresh Lime Curd

Reviewed: May 8, 2011
Served this on fresh homemade English muffin toast. Amazing!! I couldn't believe how easy this was. I'll never buy lime curd again. FYI - the natural color of this curd is not green - more a shade of yellow. Used 1 drop of green food coloring to lean it toward green which was more of an experiment than anything else and really not necessary.

Orange Cream Fruit Salad

Reviewed: Jul. 20, 2011
The orange juice concentrate gives this salad such a refreshing flavor. I've found that I get the best results by really draining the canned fruits well - even blotting with a paper towel - prevents it from getting soupy.

Easy OREO Truffles

Reviewed: Jul. 25, 2011
With all the great reviews of this recipe, I think I was expecting it to be better than it was. Not sure I like the Oreo taste of the truffles - thought by mixing with cream cheese they would be creamier. They were okay but just didn't hit the mark of being "amazing". Will continue to look for a more traditional truffle recipe.

No Bake Peanut Butter Pie

Reviewed: Sep. 21, 2011
This is an delicious, easy recipe! I cut the fat a little by using low-fat cream cheese. I also use a chocolate crumb crust rather than regular graham cracker crust and top with chocolate shavings. YUM!

Portobello Mushroom Burgers

Reviewed: Sep. 21, 2011
I think I liked the idea of these "burgers" more than the actual burgers. They may have been better with some sauteed onions and crispy turkey bacon. Probably won't make these again. Sorry!
