Hearty Beef Enchiladas

This was pretty good! It was different then traditional enchiladas, because of the chili beans, but good just the same. Everyone had seconds, and with 4 small semi-picky eaters, that says a lot. I used Mrs. Espy's Enchilada Sauce over it, and it was a great dinner! My husband came home from work starving, and started dipping tortilla chips in the mixture. It turned out to be a very good dip. I think I may add cheese to this and have a wonderful dip the next time I need one.

Mrs Espy's Enchilada Sauce

Wow! The best sauce not from a restaurant! Easy to make too. I used chicken broth, as most reviews suggested, but other then that, kept it the same. Not too much heat, and the kids enjoyed it also. I used it over Hearty Beef Enchiladas, and everyone had seconds.

Chicken Fajita Marinade

These were by far the best fajitas I have ever made! I followed the ingredients exactly except for the fact I eyeballed them instead of using measurements. . ( Which I do 99% of the time I cook anything) I used the fit and trim Purdue chicken breasts, because my husband and I are both trying to loose 30 pounds. Which is why I chose this recipe. Its so low cal. I used Michelob Ultra Lime Cactus beer. We grilled the chicken, and I sauteed the peppers with an olive oil spray, paprika, garlic, and chipotle, and served it on a whole wheat tortilla. My kids and my husband and I loved this, and will make it again!

Easy and Delicious Chicken

I picked this recipe because of the reviews that said they're children all loved it. Not once did I have to say "eat your dinner" They LOVED it! My husband and I also enjoyed it. I followed the directions exactly, except all I had was bone in, skin on, chicken breasts. I put it on angel hair, and it gave the heavy cream sauce a light texture in my mouth. My husband put cajun seasoning on his seconds, to give it a kick, and enjoyed it as a whole different meal. This is a keeper!

Sweet and Hot Apple Slow Cooker Pork

This dish was delish! And the ease of it really made it a winner. Both my husband and I agreed that it wasn't spicy enough, and I used three peppers instead of two. I halved the potatoes and left the peel on, and added them the last two hours of cooking and they came out perfect. I will make this again!
