I am a full time high school teacher raising an energetic toddler. I like to cook dinner but it has to be quick and easy because I don't have much energy left by that time of the day. I have been overweight for about half of my life and am trying to improve my diet while setting a good example for my son and keeping my (not so thrilled husband) healthy,too.
My favorite things to cook
I love anything with cumin, chili, jalapenos, chipolte, and cilantro. I like to experiment and try new dishes that are flavorfull and healthy.
My favorite family cooking traditions
My mother came here from the Czech Republic. Their foods are "peasant" foods which means small portions of meat, lots of dumplings, and alot of high calorie sauce. That diet wasn't bad for the peasants because they ate such small portions. We however, have been able to indulge.
My cooking triumphs
I have found that I can make even complicated dishes, if the time, my husband, and my child allow it. I prefer to find the quickest way to get from A to B with the least ingredients that I hopefully already have on hand.
My cooking tragedies
Czech Paprikas. I added to much flour to the sour cream and the sauce was... well not really a sauce.
