Within the last 2 years I've lost 25 pounds. I'm eating different and have been working on learning how to cook differently.
My favorite things to cook
I love fresh vegetables and recipes that are quick easy and fresh tasting. Although I also love spicy curries and recipes that might not be quite as healthy or quick on occasion.
My favorite family cooking traditions
My family and friends always request my poppy seed bread at Christmas and chocolate peanut butter balls. We all have fairly diverse preferences beyond that.

Spicy Vegan Potato Curry
Oh Man!!!!!! This is so fabulous. I can't wait for my husband to get home. He is gonna love this one. Thanks for a GREAT curry!! I made it according to the recipe but can already imagine endless ways to fix this, with other vegetables.....YUM!

Food Processor Chocolate Whipped Cream Frosting
I used powdered sugar for a creamier version and a double recipe frosted my layer cake. So so good. I also don't like overly sweet frostings. On a dense chocolate cake it was awesome. And if you don't have a food processor buy one. It made this soooo easy. I dumped the ingredients in, turned it on and just frosted the cake for a very quick and easy frosting. Did I mention I love this recipe? Yum. Oh and I just used my blade attachment.

Curry-Style Chicken and Spinach
I lightened the recipe considerably by only using 1 Tbsp of butter and fat free half and half instead of cream. It was very good and didn't taste 'light' at all. I neglected to read reviews first and will add more spices next time.
