Bacon Cheddar Deviled Eggs

I had a couple friends over and decided to make these. I made the mistake of using fresh eggs and they were not easy to peel. So needless to say my presentation was not very good, but the filling was great. I added red pepper to spice it up. I will make these again.

My Crab Cakes

I made this today and really enjoyed the taste. I only made 2 so reduced the ingredients, however, I dont feel that they had enough substance, a little limp. I crushed 10 ritz crackers. Maybe I need more? Panko bread crumbs were a good way to go.

Stuffed Chicken Valentino

This chicken was pretty good, but not outstanding by any means. I did add some portobello mushroom to the middle and added garlic powder, red pepper flakes, rosemary and basil to the dry mixture. I will try it again and will add a little more mushroom and moz next time.

Broiled Tilapia Parmesan

Yummy, this was really tasty! I have never made Tilapia before and it was so good. I followed the recipe exactly and had sauteed sugar snap peas/ red bell peppers on the side. I have a couple more tilapia recipes I want to try, but I will certainly make this one again.

Shrimp Stuffed Mushrooms

This appetizer is pretty tasty! I used lite cream cheese, baby shrimp, mixed in bacon bits ( I couldnt find bacon flavored crackers anywhere!), and the cheddar cheese. I melted them a little bit in the microwave to make it creamy. I left out the stems, seemed kind of weird to have them in the mix. Good stuff!

Sausage Stuffed Jalapenos

Very delicious! I used Aidell's Cajun sausage, lite cream cheese, shredded cheddar, and green onions in my mix. 350 degrees for 20 min was perfect.

Baked Ziti III

This was pretty tasty and a little different than other baked italian dishes. Instead of ground beef I used Aidell's sun dried tomato and Mozzarella sausage, sliced. I also mixed the pasta with the sour cream, basil,parm and cayanne pepper.
