My ex-husband & I have been great friends since our divorce. I decided to make him his favorite old-fashioned, southern chicken & rice when he was recovering from the flu once. It was the first time I had made the dish but it looked & smelled great. I confidently delivered it with salad, rolls & some fruit & went to work. He later called to see if I was mad at him: the rice was totally crunchy and the chicken was pink. He decided I was trying to finish him off!!

Soft Oatmeal Cookies
These cookies have a wonderful buttery flavor. I added raisins, dates, walnuts and pecans. Nice chewy texture. Held their shape, didn't spread out flat. This will be my go-to oatmeal cookie recipe.

Bacon for the Family or a Crowd
I work in a hospital where the bacon is so good I crave it on my days off. I finally found out this is the method used to cook my favorite bacon. I agree that you need to increase the oven temp to 375 & the cooking time to 25-30 minutes if you like crispy bacon. I don't turn it or drain it until it's done. I immediately place on lots of paper towels to drain really well.

Easy Sausage Strata
My son loves breakfast casserole & we have tried them all. This is our favorite. I toast the bread and sometimes double it, but otherwise it's perfect!
