Cocktail Meatballs

This recipe is a keeper. I added salt, pepper and garlic powder to the meatball mixture. I also used a cranberry chutney I'd made instead of the cranberry sauce it calls for. They were a hit, and I'll make them again. Thank you!

Roasted Red Pepper Tapenade

This tapenade was delicious. I made it for a holiday party (it's red and green) and everyone loved it. I received numerous compliments. It's easy to make and a crowd pleaser. I also doubled the recipe and will freeze half for a Christmas eve app. I served with a thinly sliced, long french baguette, cooked on a cookie sheet at 375 for about 12 min until lightly brown. yum! Next time I'll garnish with more cilantro.

Penne with Spicy Vodka Tomato Cream Sauce

I loved this recipe. It was flavorful and quick. I used Trader Joe's mild italian chicken sausages which made it budget friendly too. They're $3.99! I'll definitely make it regularly. Thanks so much!

Slow Cooker Latin Chicken

I've made this twice in the span of a month, I really liked it. I listened to some of the recommendations and here's my two cents. DO double the liquids. I recommend medium or mild salsa because hot overpowers the other flavors. Mild is a bit weak for me, but still good. Cook on high for just 4 hours. If you cook longer than that and it all has a similar mushy texture. Also, to save time, I just added fresh cilantro at the end and I think it added a stronger flavor and a touch of color.

Andy's Spicy Green Chile Pork

I thought this was a tasty recipe and I'll definitely make it again. Next time, I'll opt for a spicier salsa or more serranos as it came out rather mild, but still tasty. We ate it with corn tortillas, fresh tomatoes, avocado and cheese, then a second time as quesadillas.

Chicken and Artichoke Minestrone

On a whim, I made this recipe for a casual dinner party and it was really delicious. I think it was the artichoke that caught my eye, but I loved it because it's a hearty winter meal. I took someone's suggestion and added some white beans. I will make this again and again. Thank you! Thank you!
