My favorite family cooking traditions
My grandmother was a professional cake maker, primarily for weddings, so food has a long, fabulous tradition in my family. When she passed away, she left her KA stand mixer to my sister. I started out in the kitchen as a little tike, helping Mom bake cookies. I can't imagine not being in a kitchen.
My cooking triumphs
My biggest truimph was winning the best cake at my nephew's school. They have an annual cake auction and mine won by a vote of 38 out of 42. There were 5 cakes in the finals.
My cooking tragedies
The time I made cheese fudge in July. I didn't take into account the humidity . . . The good news is that we put it over ice cream and have discovered an excellent new dessert topping.

Mascarpone Substitute
The only thing I use mascarpone for is tiramisu. My recipe calls for a pound, which is two $4.00 packages of 8 oz mascarpone. This recipe reduces my cost to $2.00, as I can usually get cream cheese for a buck a package and always have butter and heavy whipping cream on hand. NO ONE has ever noticed that I use a substitute instead of mascarpone. I usually put this in my KitchenAid stand mixer and let it whip for 10 minutes for a nice smooth, creamy texture.

Tiramisu II
Great recipe, very easy. The only thing I would change is instead of soaking the ladyfingers in a bowl, I would take a spritzer and spray the ladyfingers. There's not a lot of liquid and I found some bites did not have an evenly distributed flavor of the coffee/rum mixture.

Best Ever Cheese Fudge
One of my favorites. Sometimes you've got to add a little more powdered sugar, because humidity affects this recipe easily, but it's one of been making for years and one that I'll continue to make. Because friends & family constantly request it.
