Mom's Chocolate Meringue Pie

great recipe also added about 1T of instant coffee to the filling just befor pouring it into the pie shell. yummy. I did not use the meringue topping this time just used homemade whip cream. Next time will try a meringue topping.

Spicy Indian Dahl

AWSOME!! we love indian food so this was great. I did not have Jalapenos on hand so I substituted 1 tsp indian chili powder, and only had 1 1/2 cups of chopped tomatoes so that is what I used and the flavor was great. It was a little hot for my 10 yr old but when he added plain yogurt to it to counter the heat he enjoyed it as well. (note: if you have never used indian chili powder, it is hotter and has a unique flavor you don't get with other chili powders. you can get it in indian markets)

Sweet Corn Muffins

very good and not really crumby like most corn bread recipes. My kids loved them. They are very sweet. I cut the sugar down to 1/2 cup and will probably cut it down event further next time. but my kids loved them. recipe makes a lot. Was able to make 24 regular sized muffins + 11 mini muffins.

Spiced Eggplant Indian Style

Not a lot of flavor. if your looking for just a vegi side dish it would be fine. but not an indian flavor. I added Tandoori Masala and it gave it a little more of an indian flavor but I did not add enough to make a difference because I did not want to alter the dish too much the first time. Not sure if I would make again.

Chipotle Crusted Pork Tenderloin

This is wonderful I how ever was in the mood for indian food so I substidutid the chipolte for Indian Chili powder and it was wonderful really hot but good. Next time I do this if If I use the indian chili powder again which Iam sure I will I will reduce the amount used and possibly increase the amount of brown sugar to counter the spiciness of the indian spice. I acctually cooked it on the grill outside and everyone loved it. The leftovers were good on top of a green salad served with blue cheese dressing

Honey Oatmeal Bread II

Great bread. I use the kneading hook on my mixer instead of had kneading it for 20 min by hand and it turns out just fine. I also omit the oatmeal and honey on top of bread so that a picky child of mine does not realize that there is something healthy in this bread.

Indian Dahl with Spinach

This is very good. However, for my preferance the lentils need to cook about 10 - 15 min. longer than what recipe calls for. I add a tad more indian chili powder than what it calls for. I also like my Dahls to have a tomato base sometimes, so next time I make it I will also try adding tomato paste. I have made this several times and have played around with the amount of spices. my husband loves it 2 of my kids won't touch it (too spicy) and my other son will eat it he just adds plain yogurt to it if the spices get to hot.

Indian Tandoori Chicken

This was very good. My kids who are starting to really like Indian food also liked it. I however did not have the food coloring so omitted it. If you have not had Tandoori chicken before it probably would not bother you, however it needs the food coloring to have the authentic tandoori chicken appearance. I will definatly make this again and use the food coloring next time. I also will put the onions through the food processor. I chopped them but they just were not fine enough to really stay on the chicken when cooking.
