Brown Sugar Meatloaf
Had a craving for meatloaf but rather than resort to my original recipe (which is actually pretty good) I went looking for a different one. So glad I landed upon this one! I made some of the adjustments others recommended: mixed together the brown sugar and ketchup and added 1 T Worcestershire; replaced the onion with a packet of onion soup mix and the ginger with a tablespoon of minced garlic; replaced the saltine crumbs with panko (just because that's what I had in the house), put the glaze mixture on top instead of on the bottom. In my oven it took exactly 1 hour plus 10 minutes sitting and it was -- and is -- SOOO good!

Green Chile Spinach Quiche
I made this for a pot luck (halved the ingredients since I was only making one) and it was gone within an hour...so I'm basing my rating on that. :) I didn't even get to taste it...which is why I'm making one for myself right now.

Adobo Chicken with Ginger
Really good and easy! I agree that getting the right flavor balance is a little tricky; mine had a little too much pepper in it. I took the advice of others and browned the chicken in onions first. I also pulled out the breasts after 30 minutes; I may have left them in if they'd been bone-in. I will definitely make this again.
