Cottage Cheese Roast

The original recipe, as far as I know, has 1/3 C chopped onion too which makes it even better. I love this recipe with that added onion and an equal amount of chopped green pepper and i\a big squirt of catsup. It is awesome when its room temp and when its cold. It makes the best meatloaf sandwich. I don't add any oil at all and its great!

Artichoke & Spinach Dip Restaurant Style

I used the entire 15 oz jar of Bertoli Roasted Garlic Alfredo and some extra cheese. I also added finely chopped red pepper, which looked pretty as well as tasting good! I didn't have any fresh garlic in the house so I used garlic powder and that worked out great. Really tasty dip!

Nancy's Chicken in Puff Pastry

I've made a version of this for many years. What I do is cook the chicken all the way thru and the chop it up. You can chop it as fine as you like and then mix it with softened cream cheese. You can use either the kind with the chives or plain and the add your own minced onion to taste. Also I have used Pillsbury crescent rolls instead of the puff pastry.Just pinch the 2 triangles into 1 square and then place the filling in the center. Bring all 4 corners together to form a pouch like package. Just make sure you pinch the corners together so the filling doesn't leak out. Since the chicken is already cooked you just need to bake until golden brown. This is a great way to use leftover chicken or turkey. They are great with chicken or turkey gravy on the side!

Cauliflower and Broccoli Bake

The ratio of fat to flour to liquid is off in this recipe. Find yourself a good white sauce recipe and than just add your own cheese to taste. Then you can add any kind of veggies you like to it.
