Layered Enchilada Bake

WE loved this recipe. I replaced the meat with vegetable crumble since I am a vegetarian, and even my husband loved it! (and he's not a vegeterian) Also added some sliced black olives.

Sweet Potato Pie III

I didn't realize it until after it was made that there was no sugar in the recipe! All that work and we didn't like it. Maybe if you load it down with a lot of whipped topping it will be edible!
