Slow Cooker BBQ Chicken

Amazing! Great as-is, but also delicious and not so sweet with this quick change: replace half of the maple syrup (1/4 cup) with Sweet Baby Ray's Hickory and Brown Sugar BBQ Sauce. It adds a great smoky flavor which really complements the rest of the sauce. I'd eat this every other night if I could :)

Southern Apple Tuna Salad

As written, it was very good. Made it again and left apple peels on and used heaping tablespoons of relish, and it was excellent. Hubby loved it! Trying it with chicken in place of tuna tonight-yum!

Green Beans with Cherry Tomatoes

Absolutely delicious! I've never had green beans so full of flavor. The sweetness is a nice change from traditional bean flavorings. I didn't have fresh tomatoes on hand, so I subbed canned diced tomatoes, and it was still delicious (and a bit quicker to prepare!). Great recipe that is definitely a keeper!

Good Old Fashioned Pancakes

By far the best pancakes I have ever had! Followed recipe exactly, and they came out light, fluffy, and so flavorful. I won't be buying boxed pancake mix any more! Absolutely delicious!

"Pantry Raid" Chicken Enchilada Casserole

Delicious as-is! I have subbed ground chicken many times before, and I like how you really get chicken in every bite that way. Great, easy recipe, with items I usually have on hand (I specifically keep cornbread mix in the pantry just to make this at any moment). May be a little on the spicy side for those not used to having hotter foods, so you can always cut the chili powder in half to still get the flavor without much heat. I recommend doubling the recipe and baking in a 9x13 pan so you have plenty of leftovers to enjoy!

Garlic Chicken

Simple, delicious, and quick! This chicken was very moist, and the garlic flavor was great. I used minced garlic, rather than the "crushed" it calls for, and just used about 2.5 cloves. We always keep a jar of minced garlic on hand, so this recipe was incredibly quick and easy. We're adding this to the meal rotation!
