Chef John's Macaroni and Cheese

This is a fabulous recipe! The only thing I recommend is increasing the sauce and cheese. The only way this recipe could be better is to make is cheesier. The flavor is great!

Yummy Quiche

This is a great and simple quiche recipe. You can substitute sausage,ham or chourico and it all comes out delicious!

Supreme Apple Butter

This is amazing. I deviate from the directions only in the way that I had everything at one time and put in the crock pot all day or all night on low temperature. When the fluid is cooked off to the right consistenty, I put it in the food processor to make sure the lumps are all gone and then I can it.

Hot Pepper Jelly

This is great! I have never made pepper jelly and I searched and searched. I decided on this one and I am so glad I did. My family likes things very hot, so I made a couple of changes. I used 1 cup of jalapenos, 1 cup of green pepper and 2 cups of red peppers. This way the total amount of peppers is the same. I didn't have any problems with it setting and it is beautiful in the jars. I used powdered pectin and I didn't have any setting up problems.

Plum Jam

This is lovely Jam....However I wish I had follwed the advice of other reviewers and cut back on the sugar. It is very sweet. I did use two boxes of pectin and didn't have any problem with setting.Thanks for the recipe!

Baked Scallops

My husband and I live in New England and so we are very familiar with great seafood. This recipe is amazing. I used minced garlic 2 tbls instead of cloves and it was still wonderful. I doubled the recipe and used 1 1/2 lbs of scallops and 1 1/2 lbs of prawns. It is great to have both.
