Cranberry Sauce Extraordinaire

This is a totally fabulous cranberry sauce, but I make it without the pecans. I love pecans, but I don't care for them in this dish. They create a bit of a weird texture for me. I have used several different types of dried fruit - dried cherries, cranberries, raisins, blueberries, apricots, etc. I've made this sauce many times and always get rave reviews!

Pretzel Turtles

So simple and so so good! I found wagon wheel pretzels made by Utz and they were the perfect shape. I've used Rolos and Dove with good results both times, but I have some thoughts: I found that the Rolos actually work a little bit better since they are a little smaller. They squish and spread out a little bit more neatly when you put the pecan on top. The Dove chocolate caramels were delicious, but a bit too big for the pretzels. There was some definite oozy squish-out of the caramel when I used the Dove, but not with the Rolos. I tried lowering the oven temp. to 275 for the Dove, but still had the same problem with the leaking caramel. If you don't care about looks/presentation, then go with either one. If you want them to be neater, use Rolos. Either way, delicious and addictive!

Chicken Satay

So so good! I put the chicken skewers on a cookie sheet and broiled them for a few minutes on each side, so it was easy to tell exactly when the chicken was perfectly done. I also liked how the cookie sheet method helped save a lot of the sauce so that it could be spooned back over the chicken. I served this with Vietnamese Spring Rolls and sesame broccoli. My family gave the whole meal rave reviews!

Easy Morning Glory Muffins

Great recipe! I substituted 1 cup of applesauce for the oil and they turned out perfectly. I used sweetened coconut, so I only used 1 cup of sugar instead of the 1 1/4 cups that the recipe calls for. The cinnamon alone would've been fine, but I also added some cloves, allspice, and nutmeg for a little extra spice. Very moist, delicious, fiber-rich muffins!

Vietnamese Fresh Spring Rolls

It takes some practice to get the spring rolls wrapped up, but it's well worth the effort! I added tiny strips of carrot and red and yellow peppers for color. Make both dipping sauces - they are both delicious and very different from each other. These spring rolls are light, refreshing, and healthy! Highly recommended!

Gourmet Sweet Potato Classic

No more marshmallows! This is decadently delicious. As far as I'm concerned, this is the only recipe for Thanksgiving sweet potatoes. Protect your sweet potatoes from the horrors of marshmallow goo - use this recipe!

To Die For Blueberry Muffins

Wonderful recipe! I used frozen blueberries and these muffins turned out just fine. My husband ate three in one sitting and he is not much of a baked goods fan! I'll definitely make these again.
