Mandarin Orange Chicken

I made this recipe almost exactly at stated (minus the cashews because someone had eaten them all when I went to use them grrrr!) I did double the sauce as well as add broccoli. My husband and I thought it was ok. A little on the sweet side. Seemed like it was missing something. However, my 6 and 8 year olds LOVED it. They inhaled their bowls. They wanted it for breakfast the next morning! I wouldn't let them so they had it for lunch and my son finished it off for dinner. Will definitely be making this some more!

Colleen's Slow Cooker Jambalaya

I have had this recipe on my "need to try" list for quite some time and finally got brave enough to try it. I am from Louisiana and know a good jambalaya so I was a bit skeptical. This turned out awesome though! I did a couple of things differently but not enough that it completely changed the recipe. I added the full can of chicken broth (didn't want to waste the little that was left), 1 can of tomato paste, 1 bay leaf, and instead of all the individual herbs/spices I just used 1.5 tablespoons of the Creole Seasoning Blend that is found on the site (I use it a lot already and it had all the same herbs and spices called for in this recipe). I let it all cook on high for about 3.5 hours. I added in the shrimp (uncooked, frozen) and 4 cups of cooked rice and let it cook for another 30 minutes. Perfect texture and consistency. Not soupy at all. I will be making it again!

Clemons Family Bean Dip

This was AWESOME! I have made this twice in 2 weeks, doubling the recipe both times. I left out the jalapenos just because of personal preference. The second time I added some cumin, garlic salt, and onion powder to the meat as it cooked and will do it that way from now on. Everyone LOVES it, including my two young children. This weekend, I will be making a quadruple batch and simmering it in the crockpot for a Halloween party. One thing to note is that mine has never looked like the picture at all. Not a bad thing, just wanted to put it out there because I thought I had done something wrong at first.

BBQ Pork for Sandwiches

This was amazing and will be a regular recipe for family meals! All my store had was bone-in pork shoulder butt which worked extremely well. I added a few shakes of liquid smoke into the beef broth. It ended up cooking on high for about 10 hours before it was done. I removed the meat (no juices) from the crockpot and put it in the fridge overnight. About noon the next day I took it out, shredded the meat with my fingers, added 3 bottles BBQ sauce (it was a lot of meat!) and a few more shakes of liquid smoke. I cooked it on low in the crockpot with the lid OFF until dinner time. It had a great texture (not mushy) and a great smoky BBQ flavor.

Sausage Cornbread Bake

This was really good! The only thing I did differently was instead of layering, I just mixed it all together. I will definitely be making this again. I think next time I will add a bit of sage to it though.

Coconut Pecan Frosting II

Excellent! So much better than the can stuff! I followed a previous reviewer's tip and brought it to a "smacking" boil and let it boil for 5 minutes, stirring occasionally. It thickened right up and turned out perfectly.

Slow Cooker Scalloped Potatoes with Ham

Excellent! I substituted evaporated milk for the water. Instead of using the crockpot, I layered everything in a casserole dish. Covered it with foil and baked it in the oven at 350 for 1 hour. It was great and my whole family loved it. I will be making it again.

Burgundy Pork Tenderloin

I made this for my family when they were in town for Thanksgiving. The only change I made was that I made a package of the gravy according to the directions on it and added that to the pan of wine/gravy. It was perfect and I was glad I did that as the wine would have been overpowering otherwise. Everyone loved it and my mom took several copies of the recipe.

Awesome beef jerky! I bought a food dehydrator and couldn't wait to make some beef jerky. I choose this recipe and I am so glad I did. My 3 year old son loved it as well! I will be making it again and again!
