Award Winning Soft Chocolate Chip Cookies

I cannot believe how good these were! I took them to two picnics and they were a hit at both. Next batch I'm going to try butterscotch chips and a flavored pudding. Thanks!

Raspberry and Almond Shortbread Thumbprints

I made these a bit differently. I baked the cookies and then half way through I spread blackberry jam and honey on each one. After they finished baking I let them cool for a few minutes and then sandwiched them. After they cooled I then drizzled melted dark chocolate with ameretto overtop of them. Wow! They were heavenly! Next time I'm gonna try the original way but with honey too!

This is a terrific easy fast dish that tastes good. I used italian bread crumbs and kosher salted my chicken 5 minutes before dredging in mixture.

Rosemary Pasta in Roasted Garlic Sauce

This was a great alternative to our normal tomato or garlic oil sauce. I used scallions in place of onions and bowtie pasta. The pasta held the sauce wonderfully! Also instead of shredding the cheese I food processed it so it was chopped into small chunks rather than fine shreds.

Port And Mushroom Sauce Chicken

It's hard to find a non dairy chicken dish that has a big flavor. I used dried tarragon instead of fresh. The only thing I would change is the amount of oil I used. I strayed from the original 1 TBS and it separated the sauce....make sure to follow the instructions! I also cooked everything together for about 15 minutes which made the chicken really tender. I will make this over and over again in the future!

Chicken Breasts Pierre

This had a wonderful sweet and tangy flavor and offered a different solution for chicken. Simmering the chicken in liquid for an exteded amount of time always gives a tender cut and is never tough. I served it with a small soup crock of homemade mac and cheese. It was the perfect compliment. Great for a cool crisp day.

Delicious Ham and Potato Soup

This was a velvety soup that I will make again. I took an extra step and blended all the veg and potatoes after they boiled for a less chunky soup. Everytime in the past my milk recipes usually turn out curdled...now I know how to make it perfect. Thanks.

Meatloaf Cordon Bleu

I did this a little differently but with excellent results! I stuffed it with american, mozzerella and pepperoni. Topped it with strips of bacon and a ketchup, brown sugar, mustard sauce. I cooked it covered for an hour and 10 minutes and uncovered for 20. It was moist and wonderful! I will make this one again and again.

Mango-licious Tilapia

T-Bones with Onions

Chunky Marinara Sauce

This was great! Simple and tasty. I prefer a smoother sauce so I blended the onion, garlic and diced tomatos in the food processor then added that to the rest of the ingredients. Wonderful!

Creamy Pesto Shrimp

I made this without the shrimp as a side and it was wonderful. I wanted to amplify the pesto flavor so I doubled the amount...this was tasty but it started to separate so be careful!

Butternut Squash Casserole

I'm a sucker for sweet squash so I used butter instead of margerine and cream instead of milk. I also went crazy with the nilla wafers....It was a hit with the family and friends. Highly recommended!!

Spiced Butternut Squash Soup

This was a good cold day soup. It is filling as well. I think the sherry overpowered some of the flavor so next time I make this dish I would lightened the sherry . Overall it has a nice subtle flavor.

Lemon-Maple Butternut Squash

This was a great alternative side for lemon tilapia. It has a subtle sweetness that can not be duplicated with imitation maple syrup so make sure you get the real thing! The lemon zest brings out the freshness of the squash and gives a twist of summer to a traditionally fall food. We really enjoyed it and will make it again.

Johnny's Grub Rub

We rarely grill without it!! We keep a big container in our spice cabinet. It gives a sweet spice to steak and pork. It also darkens the outside which gives it more of a charred look for gas grills. Sometimes we'll add olive oil to the meat after applying the rub so the flames jump up and sear it. Wonderful.

Pumpkin and Sausage Soup

I tried this one several different times with different additions. I have used italian sausage and added some pumpkin pie seasonings such as ginger, cinnamon and cloves. My boyfriend loves it sweet so I usually punch up the brown sugar until it meets the taste requirement. A great recipe that you can tweek to your preference.
