Mandarin Orange Chicken
Definitely a keeper! The family loved it. A very quick and easy recipe. I did not have mandarin oranges so I used a tangerine I had on hand. I think it definitely needs mandarins as the tangerine was slightly bitter. I also added chopped zucchini and thinly sliced green peppers that needed to be used up. The sauce was delicious. I tripled the sauce as DH likes to have lots of sauce and I didn't think the specified amount would be enough for us. Doubling would have been fine.

Chicken and Red Wine Sauce
Fabulous recipe! I made it exactly as the recipe is written and it was wonderful! A huge hit with the family. I did not find the sauce too sweet. It was perfect for us. Maybe the type of red wine makes a difference. I used a Pinot Noir. Instead of basting the chicken while it cooked the last 20 minutes, I just turned it over so the chicken could soak up the gorgeous sauce and stay moist. Amazingly easy and delicious. Thank you for the keeper recipe!!

Black Beans with Pico de Gallo
Super simple and very quick! Even my "where's the meat" DH liked it. I followed the recipes exactly except I left in the bacon I had cooked for the grease. The fresh pico was fabulous! It would also work as a nice accompanyment to chips. One thing I would warn everyone about is to make sure you look at the serving yield for the original recipe. I didn't and realized it almost at the end of cooking. A quick addition of another can of black beans, another garlic clove, and a little more red onion worked fine, but if you only had enough ingredients for the original recipe, it might throw someone off. Thanks for the great keeper recipe!
