Lebanese Rubbed Salad

This is an excellent recipe and my favorite salad! We make it with spinach and I do think the rubbing makes the salad even better. We make this salad several times a week. Sometimes I substitute sun-dried tomatoes if I'm out of fresh tomatoes. Definitely give this one a try!

Spinach and Feta Pita Bake

This recipe immediately made it into our regular rotation. We make it as-is and I wouldn't change a thing! Tonight we made it on whole wheat Naan bread because that's what we had in the house. It was just as delicious as the pita bread. My one-year old gobbles up the spinach and tomatoes when we serve this.

Cream Cheese Frosting II

I'm so glad I chose this recipe for my daughter's first birthday cake. It was delicious and the whole family loved it. I made it exactly as written. A few notes: -I doubled the recipe to frost and decorate a 12" round cake and even then I barely had enough. -The consistency was just right for piping decorations. Next time I might thin some of it just slightly for more spreadable icing. -I think I didn't let the butter warm up enough. I had flecks of butter that jammed in my decorator tips as I was piping. As a total newbie cake decorator it was frustrating, but probably totally my fault. I'll definitely use this recipe again!

Spicy Garlic Lime Chicken

This recipe was perfect just the way it is. I'm not the cook in our family but when my husband's away I've got to figure it out. I followed this recipe word for word and it turned out really great. The spice mix was perfect for 2 chicken breasts. If I was going to make 4 breasts as the serving size suggests, I would double everything.

OREO Mini PHILLY Cheesecakes

I've made this twice and did it differently both times. Crust: The first time I crushed the oreos, mixed with butter, and pressed the mixture down into the bottom of the muffin cup. The second time I was pressed for time and just used the whole oreo. The first way was a better texture and a better looking presentation. Cheesecake: I forgot the vanilla this time and it really did make a difference. It's not hugely flavorful, but it's really easy and it's perfectly good for a potluck, if not a gourmet dinner.
