About this Cook
I have always enjoyed creating concoctions in the kitchen, though I felt a bit stifeled when I still lived at home. (mother always peering over my shoulder and reminding me no less than 5 times to clean up my mess) Since moving out my cooking has flourished and I'm always looking for new tasty and challenging recipes to cook for my boyfriend and I.
My favorite things to cook
Anything Italian, nearly any chicken recipe, and anything involving tomatoes (I love tomato basil soup with fresh basil from my garden!). I tend to gravitate toward soul food and love when I can incorporate spices from my herb garden and fresh veggies from my regular garden.

Harvested Chicken Stew
This was great but I imagine would have been a bit bland without some seasonings. Don't get me wrong, I love the flavors of veggies mingling but I needed a little extra so I added in about 1 tsp each of dried basil, parsley, oregano, garlic powder, black pepper, and Mortons lite salt (I just eyed it so it could have been more). I also added cabbage to the mix, used fat free reduced sodium chicken broth and added in a bit more chicken than called for (3 breasts). I'm also not sure why it doesn't say to dice the whole tomatoes, but I did anyway because I wanted to be able to easily eat them. I drained the liquid into the pot, then dumped the whole tomatoes in a bowl to catch the juice as I cut them. This added just enough juice to cover the mix. Love this low cal dish and will definitely be making it again!

Baked Chicken and Zucchini
We loved this (even my veggie-finnickey husband) but I only gave it 4 stars because I believe without the additions I made it wouldn't have been the 5 star dish it turned out to be. I diced up 1 medium onion and 1 red bell pepper and sauteed those with the zucchini and garlic. After sauteing, I added them to the greased dish where I placed a half jar of marinated artichoke hearts in a sparse layer on top (I will use the whole jar next time..they were tasty!). I followed the recipe to a "t" other than that and it turned out great! It really creates its own side, and with all the veggies and the use of olive oil (and I used lite salt) it made for a healthy AND delicious meal!

Sweet and Sour Meatloaf
Giving this a 5 only for the sauce. I wasn't impressed with the meatloaf recipe (I could tell by the ingredients it would be bland) so I stuck with my tried and true grandmother's recipe which uses crushed crackers, pepper, salt, diced onion, shredded cheese, one egg, and half a packet of french onion soup mix. I also only used a pound of ground beef because this was just for me and my fiancé. The only change I made to the sauce was I substituted red wine vinegar for cider vinegar because I didn't have any cider on hand. Turned out great! Glad I finally found a meatloaf recipe the future hubby likes (he's found every other recipe "bitter") Thanks for the recipe!
