Company Chicken Pasta Salad with Grapes

This is an amazing salad that everyone always raves about. I have made it countless times. Often I use red grapes in stead of the green for added color. I have recently begun using 1/2 fat mayo to cut down on the calories and it is just as good. Make sure to follow the directions and make the dressing in advance as it really makes a difference for the flavors to meld. Oh, and you really don't need the sugar.

Soba with Toasted Sesame Seed Sauce

I'm giving it 3 stars as we found it pretty bland. I did blanch the broccoli first, would definitely recommend doing that. I think if I doubled the dressing, it would be better. We also preferred it heated the next day. I did use udon noodles as I couldn't find soba noodles, don't know what the difference - they do look the same.

Bulgogi (Korean BBQ)

This was a real hit! I did substitute pineapple juice for the pear juice as one reviewer suggested. I also used an organic soy sauce (no MSG) and omitted the MSG. You don't need it as the dish is very flavorful and it's an excito-toxin. I will definitely be making this again.

Cabbage Beef Soup

I've made this twice now. Love the flavor (the cumin is a great addition) and love that it is high nutrition and low fat. I did make one change in that bouillon cubes all seem to have MSG in them and we are avoiding that. So I just added water and a bit of extra sea salt

We loved this! I used less soy sauce than was called for, and didn't find the recipe too salty at all. Also I used fat-free ranch dressing to lower the fat content.

Coconut Peach Crunch Pie

This pie is always a hit! Instead of the peach pie filling, I thicken home canned peaches. I also make my own shortbread crust, and substitute butter for the margarine in the recipe - this makes a huge difference. As for the coconut, use the sweetened shredded coconut - another thing that makes the difference between mediocre and astoundingly good!
