Slow Cooker Green Beans, Ham and Potatoes
I have made a similar recipe for many years- my husband loves it! Since it always seems to be even better the next day, I realized it was because the broth becomes a little thicker as the potato starch comes out. So I started to puree a couple of the potatoes (after they're cooked) using an immersion blender (either in a separate pot with a few potatoes and broth, or just stick it in the regular pot for a few seconds). This gives it a nice consistency for a slightly thicker stew. I also substitute homemade chicken broth (or store bought broth) for the water.

Avocado, Tomato and Mango Salsa
This recipe is fantastic!! I have people ask me for the recipe every time I make it. However, you must use a good ripe mango and avocado, or don't bother making it. If I make it during tomatoe season I add chopped tomatoes from my garden, as well, and the freshness of the ingredients make this an unbelievable salsa. I omit the olive oil-the juice from the mango and tomatoes makes a nice texture and it seemed too oily when I made it the first time with the olive oil. If it's not spicy enough I add some hot sauce. You can eat it with tortilla chips or use it as a topping for grilled chicken or fish-wonderful!
