Cinnamon Swirl Bundt Coffee Cake

Excellent recipe, worked even at altitude with no adjustments. Used bundt pan & batter filled about 3/4 full, which was perfect when baked & made it easy to remove from pan. Omitted frosting - is plenty sweet without. Will make again for sure!

Chocolate Frosting I

I'm the 500th review! :) I found this recipe to be good and so easy but wish I had known the following before starting: 1. 3 1/2 c powdered sugar is too sweet, as other reviewers have commented. Should increase cocoa & decrease sugar. 2. When the milk is added to the butter/cocoa mixture (note: margarine does not enter my house), the combination seizes up and won't combine with the milk until the sugar is added. Just makes a sloppy mess. Once sugar is added, all igredients meld together perfectly. 3. Cake decorators: the frosting WILL form a nice crust suitable for decorating. 4. Would be a little less one-note with the addition of 1 tsp. espresso powder 5. This recipe makes a lot of frosting - too much for my little 9x9 pan, but probaby the perfect amount for a sheet cake. Definitely appeared to be more than the 2 cups stated. 6. I used a wire whisk in lieu of a hand mixer and it turned out great. 7. I used Trader Joe's cocoa and next time will try with a higher-end (Callebaut,Valrhona, Pernigotti, etc.) cocoa product. Good recipe!

Fresh Southern Peach Cobbler

Delicious recipe but way, way too sweet! Sugar (2 cups+3 T total in recipe) could easily be cut in half. Also, my oven at 425 browned the crust of the cobbler while leaving the rest of the batter raw. Recommend reducing heat to around 350-375 for second half of baking. Will need to increase baking time acccordingly

Dutch Apple Pie with Oatmeal Streusel

Makes too muh streusel topping (and I truly can't believe I'm saying this). The topping was very thick & flour-y. I would cut the amount of flour in the topping WAY down. THEN this pie would get 5 stars from me.

Ultimate High Altitude Chocolate Chip Cookies

Made at 6000 feet - worked perfectly. Kids loved. Used Boulder's own Chocolove chocolate chips :) No complaints - would give 4 1/2 stars if I could, though, just because I prefer a more sugary, less floury cookie. Still, my family & friends think these are perfect!

Whoa - this recipe as stated was cloying and one-dimensional. Cut the sugar in half, sub some whole wheat pastry flour, and perhaps it would be a little better... but as is, really quite awful.

Authentic Saag Paneer

Great recipe. You can feel comfortable making substitutions based on what you have on hand, with excellent results. I omitted the fenugreek, garam masala, and turmeric and used cardamom pods, coriander seeds & ground cumin instead. Doing so just changes the flavor ever-so-slightly, like the differences between saag at two different Indian restaurants. Also I didn't bother to puree the spinach - I bought pre-chopped, frozen spinach & it worked perfectly. Delicious!

Excellent recipe. I subbed coconut milk for the cream, added the curry powder along with the garlic & ginger, and increased the amount of tomato sauce a bit. Delicious!

Cinnamon Rolls II

Absolutely decadent. You can taste the butter in every bite. The reviewer who said it tastes "bready" must have omitted an ingredient or perhaps measured something wrong. My bread machine fit one full batch just fine. Used complete/full dough setting (not pizza dough). It is a little sticky when initially removed from machine, but a light knead on a flour-dusted mat and it's perfect. Made 12 generously-sized rolls. Took 45 minutes for final rise (out of bread machine), not 30. Loved this recipe!

Excellent recipe. Only subs: 1 c whole wheat pastry flour for 1 c of the white flour, & 1/2 c applesauce for 1/2 c of the oil. Tried couple other recipes on this site but this one is superior.

Used a TON of bananas - more than I expected. I subbed out 1/2 cup whole wheat pastey flour. 65 minutes is far too long baking time, as other reviewers have mentioned. Good recipe; would make again.

Homemade Black Bean Veggie Burgers

Excellent recipe! Easy & far superior to anything store-bought! My substitutions: 1. Sauteed the onions, peppers & garlic in a bit of oil (used green, red & yellow peppers), then once cool, squeezed out excess liquid in cheesecloth 2. Added Mexican oregano & liberal salt & pepper 3. Used more bread crumbs than called for 4. Froze patties then baked directly from freezer 5. Blended all ingredients except bread crumbs in food processor. Once blended, manually mixed in crumbs.

Roasted Red Pepper and Tomato Soup

I used veg stock to make it vegetarian. I also didn't bother peeling or seeding my tomatoes; the roasted peppers lend enough sugar to counteract any bitterness. I also didn't entirely puree this - I like a little texture. FABULOUS recipe!

Seafood Enchiladas

Great base for a recipe! I used real crab and top-quality shrimp. I would incorporate many of the changes the other reviewers suggested, including working a can of green chiles into the sauce or the filling, increasing the amount of sauce (don't worry about it being too thin; will thicken with the cheese when baked), adding a little hot sauce to zip it up a bit, serving with avocado & tomato, adding some of the sauce to the filling so it doesn't dry out, and placing some sauce in the bottom of the pan before adding rolled enchiladas. Ole!
