About this Cook
I began cooking when I was about 5-6 years old. I would cook dinner for my family and often picked out recipes of foods I had liked at restaurants. I prefer cooking to baking (i.e. pastry-type foods), but I do a lot of baking over the holidays.
My favorite things to cook
I LOVE Italian cooking. It's so fresh, colorful and packed with flavor. I also enjoy Greek, Indian, and Asian cooking. I tend to like spicy, yet complex flavor combinations. I really enjoy cooking any dish that includes very unexpected ingredients. I have had few failures when I have stepped firmly "out of the box".

My father is a very good cook, but my mother was the everyday cook.

Juicy Roasted Chicken
I was a little disappointed after reading all the rave reviews. This wasn't a bad recipe, but not much better than any rotisserie chicken you could pick up in the grocery deli - only more time, money, and work involved. My daughter and I both thought it was just okay. I tried very hard to use all the margarine recommended, but ran out of places to put it! I think that most whole chickens anymore are closer to 5 lbs. (mine was) and require at least 1 1/2 hrs. I needed about 1 3/4 hrs. to get this chicken to the acceptable point. We had plenty of leftovers, but I'm not feeling highly motivated to use them.

Chicken Enchiladas II
This was a very tasty and easy to make meal. My family really liked it, and my husband is a little picky. I made this exactly like the directions and it came out great. I will make this again. I like sliced black olives on top and a dab of sour cream.

Artichoke Dip I
This was very good and simple to make. My family really liked it too. I liked the addition of mozzeralla cheese. I would maybe try the cream of celery soup next time. I just hate using that much mayonnaise (even lower fat) in anything. I baked exactly 30 min. and it didn't get particularly brown, but didn't separate either as some reviewers had commented. I would make this again.
